Man has this been a crazy winter or what?

While we in the Deep South have had some extended freezes, as I watch footage shared across weather media, I wonder how some of y'all deal with that kind of weather in your day to day lives. Watching cars and trucks uncontrollably slipping and sliding on icy roads, slamming into buildings and each other like little matchbox cars, it scares me to death!

And then there's something some of us are experiencing that our elders never really prepared us for.

In case you missed my previous post for The Bouilli, this is the Beef Vegetable Soup that I made after preparing the initial meal of "boiled meat with juices," served with rice.

In short, Creole Bouilli refers to the preparation of a beef roast that is slow-braised (you don't really want to boil it) for several hours, completely covered in liquid, and to which I added some seared beef bones.

While you can use any leftover roast for this soup, of course, the outstanding flavor of The Bouilli makes a knock your socks off soup. To learn more about The Bouilli, tap that link and learn all about it!

I love chicken and dumplings. Love it! It's one of my favorite dishes and that goes for any time of the year, not just winter.

While I do tend to follow the same basic guidelines, even with a variety of methods, I'm not married to any one of them. So many folks make chicken and dumplings one way all of their life, but I love playing around with it!

I have still been working my way through the freezer - some of our meals were reheated leftovers, others, whatever meat I happened to grab first.

In the past two weeks or so, I've baked a ham that I'd picked up on a holiday sale and froze, which along with some frozen sides, gave us a couple of meals and leftover ham for sandwiches. Pre-seasoned ground beef I'd picked up on sale, cooked and put up, became one of our favorite casseroles - Ground Beef Mac and Cheese.

In the south, we'll drop some biscuit dough in just about any dish with a soup or stew consistency - beans, soup, stews, they're all game. All dumplings require is a full-bodied stock and you're in business.

Starting ham and dumplings with a nice leftover ham bone, or absent that, a couple of meaty ham hocks, makes for a beautiful, rich stock base. The freezer preserved leftover holiday ham bone makes ham dumplings a pretty common thing in the first of the new year, especially when the weather outside's been frightening.

I've made this stew a few times over this fall and winter, but the process of measuring out, documenting and photographing a recipe, so that other folks can follow it too, can be a bit daunting at times, when all you really want to do is just sit down and eat!

A hearty stew is a good thing when the weather turns cold and this homemade chicken stew sure made me happy today.

It's been a bit gloomy around here for a few days - overcast, rainy and then cold weather moved in here last night with a vengeance. I stepped outside with the pup - gotta watch over him because we've had a couple close-up encounters with possums and raccoons here lately - and brrrrr y'all.

The temperature must've dropped 40 degrees in just a few hours! I was happy that I had this stew made up, that's for sure.

The shortcut version of chicken stew that I have posted before, is a super easy and flavorful recipe for anytime you're in a hurry for a quick stew, but when you have a little more time on your hands to stew down a chicken, the added flavor from that homemade stock is just amazing.

You ever go to bed feeling perfectly fine, then wake up feeling rougher than ten miles of bad road?

Well, when we have a change in the weather, that's pretty much a given with me.

As I've gotten a little bit older, my body and my bones certainly feel these weather changes more. I try to remember to bump up my immune system in advance with supplements and some Airborne (#ad) - love, love that stuff) when I know it's coming, but sometimes I just don't remember in time.

Cajun food kinda reminds me sometimes of Mexican food. No, I haven't lost my mind. What I mean is a reference to how the same basic ingredients are often used and simply the application or process within the recipe and presentation differ. To me Shrimp Stew is like that.

Gumbo aux Herbes, better known as Gumbo Z'herbes, or just simply Green Gumbo, is a traditional Lenten dish here in The Deep South, though it is an excellent dish served anytime for us lovers of all things greens.

I feel certain that its origins were based on a completely meatless gumbo, and while it is sometimes still served meatless during fasting Fridays of Lent, it is more often served with an over-abundance of meat, and most traditionally on Holy Thursday, the Thursday before Easter.  Frankly, while I do adore greens, I am much more fond of Gumbo Z'herbes flavored with the meats.

Turkey bone gumbo, Thanksgiving gumbo or Turkey Carcass Gumbo - no matter the name you use, it is a great way to transform at least one of your Thanksgiving leftovers into a whole 'nother meal, by extracting every ounce of flavor from that holiday bird. While everybody is busy traveling and gathering for the big feast on Thanksgiving, I wanted to remind you not to toss that turkey carcass after your Thanksgiving feast!

We've had a quick shot of wintry weather in The Deep South, for at least a few days anyway, and a good chowder made with corn, crab and a little cream, really hits the spot when that cold weather blows in. It's been such a hot fall that as much as I love them this time of year, thinking about soups, stews and chowders has been hard to do frankly. Leave it to The South to go from beach weather to frost in about 8 hours! Apparently we decided to just pass by fall altogether - gotta love The South! Course, we'll be back to beach weather in no time, which explains why my garden looks like a laundry right now, with sheets and blankets strewn across many of my plants.

I threw this Homemade Fresh Tomato Soup together recently and was just thrilled with the results.

I'm not one to knock the red and white can of Campbell's tomato soup, because that is what I grew up on and have fond memories of - and it'll always have a place in my pantry.

This version is sure a nice change of pace when you want something a little more homemade however, and the flavor is just outstanding because it comes from fresh tomatoes.

Known by a couple of different names and spellings, Yakamein (Ya Ka Mein) Soup, often just called "Yock," picked up the name "Old Sober" in New Orleans, for its alleged healing powers in warding off the after-effects and resulting hangover from late night French Quarter partying.

A popular soup in several areas of the United States, Yakamein, was sold mostly in neighborhood mom and pop bodegas of New Orleans in days past but became a lost recipe there for a bit. Maybe the flooding of Hurricane Katrina contributed to that in New Orleans.

A court bouillon is a French poaching stock made from water and typical stock veggies - onion, carrots, celery - in which generally fish is cooked. But that's the French.

Down here in The Deep South, Courtbouillon {pronounced COO-bee-YON or COO-bee-ON} is a sort of roux-based, creole tomato sauce, stewed down and reduced, and most commonly used to poach redfish, though red snapper or catfish are fairly traditional also. 

If you enjoy fish, this is a great dish for Lent, that is somewhat similar to Bouillabaisse, though I side with Marcelle Bienvenu, Times Picayune contributor, and author of the fantastic Cajun/Creole cookbook and a top favorite in my personal collection, Who's Your Mama,Are You Catholic, and Can You Make a Roux?

Corn and tomatoes naturally pair together so well, and thanks to frozen and canned veggies, we have access to them to make a mighty fine soup in the colder weather months. The combination of corn and sausage with tomatoes is a very common soup in the Deep South, as always with the spin of the cook. I have a feeling it was probably made with the end of the summer crops, or birthed out of the need to use up other leftovers.

Like creamy butter beans, Homemade Southern Beef Stew is another one of those belly warmin', budget stretchin' meals that's pretty popular this time of year. The weather this weekend was absolutely perfect for it too.

This is an old standby beef stew recipe that I've used since the late 70s and have made very few changes to the basic recipe since then. It's a wonderfully savory stew, with loads of herbs (use fresh if you have them), rich and just full of flavor.
