Cajun Chicken Stew with Potatoes and Egg


A chicken stew made with the trinity and a roux is pretty common in Cajun country, whether it's with or without the addition of potatoes or boiled eggs.

Adding either of those to a stew or gumbo was common, potatoes to make a stew fill more bellies and boiled eggs to extend the protein because, at least at one time, eggs were a pretty inexpensive source of protein that would substitute for a lack of meat.

Economics aside, it's still a tradition in many families!

I love chicken and dumplings. Love it! It's one of my favorite dishes and that goes for any time of the year, not just winter.

While I do tend to follow the same basic guidelines, even with a variety of methods, I'm not married to any one of them. So many folks make chicken and dumplings one way all of their life, but I love playing around with it!

Whole chickens go on sale around here all the time, usually at 99 cents a pound, though sometimes as low as 69 cents. They usually restrict the number you can get, but I always get the limit and go back for a few more another day if there's room in the freezer.

It's considered a loss-leader in the industry, and it works, because that second trip always ends up with additional grocery purchases, even if only to stock up the pantry with canned goods and such. Although a 3 to 4 pound chicken is sufficient, I say get a bigger one and put up what you don't use here - that's what I do! The chicken I used here was nearly 6 pounds, so I had a few cups to freeze for another meal.

A hearty stew is a good thing when the weather turns cold and this homemade chicken stew sure made me happy today.

It's been a bit gloomy around here for a few days - overcast, rainy and then cold weather moved in here last night with a vengeance. I stepped outside with the pup - gotta watch over him because we've had a couple close-up encounters with possums and raccoons here lately - and brrrrr y'all.

The temperature must've dropped 40 degrees in just a few hours! I was happy that I had this stew made up, that's for sure.

The shortcut version of chicken stew that I have posted before, is a super easy and flavorful recipe for anytime you're in a hurry for a quick stew, but when you have a little more time on your hands to stew down a chicken, the added flavor from that homemade stock is just amazing.

Next time you prepare a roasted chicken, might as well roast two of them for some planned leftovers. Having those little freezer bags of already cooked chicken, makes for speedy weeknight meals like this speedy chicken stew, that I have enjoyed for years, an adaptation of a long ago recipe from an old Campbell's cookbook. I think you will love it too.
