I had these two beautiful bone-in pork chops in the freezer just waiting to do something with!

There were four in the pack originally but since since there are only two of us at home, I used them two at a time. First, to make those fabulous stuffed chops again and I just froze the remaining two for another time.

I thought that I'd do a simple marinade and grill the remaining two.

I love sauce and pasta dishes like this chili mac. It's so easy to throw together and gives you such a tasty dish that really most everyone loves and it's good any time of the year.

Besides a multitude of variations within the recipe itself that you can make by increasing and decreasing the chili seasonings and yes, even the cheese (or even leaving the cheese out), there are other ways to vary it too, just to give it a different flavor. Taco seasoned comes to mind as does a more mildly seasoned ground beef "helper" style of pasta and everything in between.

Like many Southerners, I love fried chicken, especially when it's prepared well. Although pretty rewarding in the end, it is a little messy frying it at home though and frankly takes practice,  meaning you need to keep making it often to perfect the processes!

You know. Like Grandma did.

For those reasons, lots of folks satisfy those occasional fried chicken cravings with take out these days and while really great fried chicken can be found at sit down restaurants, you can also find it at locally owned gas station counters, at regional grocery store delis like Winn Dixie and Rouses in my neighborhood, at local sit down or take out buffets like Hartz, Cajun's and Broome's and fried chicken places like Popeye's and KFC.

The one problem? Have you seen the prices?

Some of y'all may know about one of my favorite pasta sauces that I typically make in the summer with those super delicious, fresh from the garden tomatoes. It's simple, light and so flavorful.

When we talk about spaghetti, most everyone first thinks about spaghetti noodles in a tomato-based sauce that has either a ground beef base or meatballs. Delish!

But, there is a whole world of spaghetti to be had out there y'all!

Down here along the Gulf Coast, shrimp spaghetti is a top favorite, as is a Creole daube made from a roast, along with an andouille based spaghetti but, there's also veggie spaghetti, cowboy bacon spaghetti and many others to be had also.

I have a pretty good collection of baked ham recipes here on the website, but you may have noticed that I haven't ever featured a spiral sliced ham here. Ever.

Until today.

There's a reason for that, and it's simply that I have never had a great amount of success in warming them through without it ending up dry. Until today.

I am happy to say that, as simple as this ham is, it turned out excellent!

Some years back, Popeye's Louisiana Kitchen, which by the way makes the most delicious fried chicken evah, introduced seafood to the menu in some areas. Some menu items were offered only on a limited time basis. Hushpuppy Fried Shrimp was one of those.

I was intrigued.

So, for research purposes, I requested that my husband aka here as "The Cajun" swing in and pick up a small order of them on his way home for us to try.

I love my air fryer! I may have mentioned that before??

It's great for reheating certain leftovers to bring back the crisp - like fried chicken - and it does an amazing job of reheating pizza. A lot of busy moms use them to cook freezer foods - like chicken nuggets and tenders, French fries and tater tots, corn dogs, egg rolls, and, in fact, many products have begun putting air fryer instructions on their packaging.

But I love it for cooking too!

In case you didn't know, we're pretty big on fresh fish here along the Gulf Coast!

Local Gulf favorites include speckled trout (my personal favorite), flounder, snapper, grouper, redfish, drum and lots of others in the deeper waters. Give me any one of them!

The Cajun goes fishing with his brother on occasion and the fish they come home with most often are two very popular fish found in the Mississippi Sound - white trout and ground mullet - also known more officially as southern kingfish.

While I don't eat it every day, and I rarely cook it at home anymore because it can be a bit messy, I do LOVE fried chicken.

Absolutely love it.

The chicken is tender. The coating on the deep-fried skin is so deliciously crunchy and loaded with flavor, it may well be my most favorite part. With easy access to places like Popeye's, and our local fried chicken buffet Hartz, fried chicken is The Cajun's and my top comfort food. We probably eat it more often than we should!

I grew up, and still live on the Central Gulf Coast where seafood is abundant. Whether you catch your own, or pick it up from a local seafood market, there's nothing that can compare to it from a grocery store freezer section, nevermind that which comes from foreign markets. Nothing.

We love them about any way they come really, but one of my top favorite ways to make them quite frankly, is in the oven. They are so tender and delicious and despite what the pro-Q'ers say, The Cajun and I love them that way.

I love cabbage rolls, but the prep always seems overwhelming!

It's really not that bad though, it just seems so, because every time I go ahead and start them, I realize the dread of the "work" was mostly just in my head. It just seems so daunting to think about it all, but really, some of the prep can even be done ahead of time.

This dish is a bit of a shortcut on that classic stuffed cabbage flavor, but without that anticipated dread.

You may not have heard of Monte's Ham. It's been around awhile, dating back to 1995, when Monte Mathews developed it for, and it subsequently became, one of Saveur magazine's most popular recipes, earning the author a bit of fame back then.

I haven't seen much talk of it as Monte's ham these days, though to be honest, I'm thinking the origins just got lost in the shuffle, as the popularity of a ham glazed with some form of orange became more commonplace. I'm pretty sure that Mr. Monte drove that trend though.

This is a classic, very basic pork roast done in the Instant Pot, or whatever electronic pressure cooker you have.

I say that, because long before the Instant Pot craze, I had purchased three other cookers - two are QVC branded Cook's Essentials pots and the other a Power XL pressure cooker. They all did such a fine job, that I didn't get on the IP bandwagon for quite some time.

I have truly enjoyed having an Instant Pot. Even though, much like the whole air fryer thing, I was skeptical, I own several pots now and I use them all the time!

For plain rice, rice dishes and boiled eggs. Potatoes for both mashed potatoes and potato salad or just for a side. Fresh green beans and carrots and cabbage and dried beans, done in no time. Pork roasts and ribs and pulled pork. Soups and stews and chicken, especially good for chicken and dumplings. And, given enough time, it's great for a nice, tender pot roast too.

It sure is fantastic for a quick pasta meal!

I love my slow-stewed chicken, but it's just that - a bit of a timely process since the chicken slow simmers for awhile.

Once I gave it a try in my Instant Pot, it was a game changer!

With whole chickens on sale regularly around here, and a faster cooking process, it has become an easy, comfort meal to enjoy anytime.

While I know we're heading out of summer, I have sure been enjoying my air fryer in this summer heat!

It was an appliance I didn't really think I needed, so I was on the fence about getting one for quite awhile, but I sure am glad that I finally took the plunge. I literally use mine in some way almost every day, though I would say that if you are going to go beyond snack foods, french fries and frozen convenience foods, go for a larger oven style.

I actually adapted this recipe from one of my older Southern Living recipe books from a long time back, just in case somebody wants to give me some guff for posting an Asian recipe... because someone will.

Hey, the reality is that Southerners eat Asian food too! We love it actually, and, in fact, one of my favorites is Chap Chae, a dish my Korean neighbor used to share with me when she made it. We've got some pretty good pho around here too, thanks to our Vietnamese population.

Beans and rice are a big deal in the south, always have been really. Back in the day, they were an important part of the dietary needs of the people, because families were large and relatively poor, so any kind of bean was an inexpensive, nutritious and filling dish.

Mostly our beans are slow cooked from dried beans, on the top of the stove, and that's really the way I still love them best to this day.

Don't get me wrong. Electronic pressure cookers like the Instant Pot do an excellent job and makes a great pot of beans from dried, but slow-stewed still rules in my book.

Fresh frozen sometimes fill in, and though faster, still take a little care to make.
