In fact, the first time I made them I thought surely it was a fluke. So I tried it again.

Sure enough, it's true! And they are good y'all.

I love ribs of any kind!

Put a few delicately smoked ribs that have been pampered over for hours on end in front of me, and I'll gobble them up for sure!

I'm just a home cook though, so I'm just not likely to be the one to stand over that wood fired smoker to make them. I'll leave that business to the experts.

We love them about any way they come really, but one of my top favorite ways to make them quite frankly, is in the oven. They are so tender and delicious and despite what the pro-Q'ers say, The Cajun and I love them that way.

Slow Braised Country Style Ribs

Boneless country style ribs are browned and cooked down with a mirepoix of onion, carrot and celery and slow braised in a vinegar, stock and mustard cream sauce. Serve over mashed potatoes, rice or cheesy grits.

Well, the grandkids are in their last week of freedom with school just about to start here. We got to spend lots of time with them in between all of their summer activities and I know they've had a blast this summer, but I think they've also missed their routine and structure from school just a bit to be honest.

They are still at the age where they are also excited about going back actually, and shopping for school supplies and clothes. That used to be my favorite thing!

I love pork ribs no matter how you make them. Smoked from my favorite BBQ joint, baked in the oven and fall off the bone, full out grilled from start to finish or started in the oven and finished on the grill.

Hang around long enough and I'll probably do a boiled version (which, by the way, I have done before many, many years ago), which I know, kinda makes some of y'all crazy when that word boiled is associated with a rib of any kind.

Pork ribs done Memphis style, left overnight with a dry rub marinade, grilled over indirect heat for 1 hour, then brushed with a simple vinegar and mustard mop sauce and finished another hour.

Now that the rain has moved outta here and the sun has resurfaced, I was in the mood to hit the grill for dinner today.

So as I write this it's March and I know that some of you are hunkered down inside due to unexpected spring ice storms and snowfall, but maybe this'll give y'all a glimmer of hope that summer is really just around the corner! And, maybe when y'all are relaxing and enjoying your summer, you'll think of us in the Deep South while we are melting right about that same time.

So I figured it'd be a good time to show y'all that other rib recipe I mentioned in my other rib post. Back in a day when I was doing yet another diet, Lisa, one of the gals on the board I was frequenting gave me this method.
