I'm a pickle fanatic.

It would be a rare day that I didn't eat one with a sandwich or even just as a snack. Although I love bread and butter pickles, sweet gherkins and kosher dills the most, anything pickled is fair game - pickled okra, jalapenos, squash and beets - yep, love them all!

So, when I saw a dill pickle pasta salad going around social media I thought heck yeah, I gotta try that!

It's pretty easy to make a pasta salad, and you don't really need a "recipe" so to speak. You just toss some cooked pasta with favorite vegetables, sometimes some kind of protein and dress it with a favorite salad dressing and voila, you've got a pasta salad!

Of course, you may not be able to recreate that combination unless you wrote it down and that's where a recipe comes in handy.

This pasta salad is one of those that went viral on social media, though, as usual there are lots of comments from folks talking about how they "have been making this all of their lives!"

Spicy Arrabiata Sauce with Pasta

A spicy, slow-simmered red sauce made with tomatoes, garlic, olive oil and red pepper flakes and tossed with penne pasta. Here I've added a few additional seasonings, some chopped sweet onion and finished it with fresh Parmesan cheese and parsley.

Spicy Arrabiata Sauce with Pasta


The word arrabiata (ah-rah-BYAH-tah) literally translates into the word "angry" and it's the heat from the addition of red pepper flakes here that earned the sauce the name, setting it apart from other more traditional Italian sauces.

If you enjoy a little heat in your sauce, start with the lesser amount of red pepper flakes. If you are already a lover of super spicy, increase that according to your personal taste.

While you can use fresh tomatoes, this sauce is often made using shelf-stable canned tomatoes, whether home canned or commercially bought, so it's an easy pasta sauce that can be prepared from the pantry anytime.

Pasta salads are such a welcome addition to the summertime menu, aren't they?

Some days it's just so hot that the thought of putting a lot of effort into a full out meal can be daunting and overwhelming, nevermind the fact that I may not even have an appetite for that!

What happens with me during those times is that I end up snacking on a whole bunch of junk, instead of having a "meal."

Not great.

Some of y'all may know about one of my favorite pasta sauces that I typically make in the summer with those super delicious, fresh from the garden tomatoes. It's simple, light and so flavorful.

Whew y'all! It's been super-hot and humid here along the Mississippi Gulf Coast and we're heading into a couple of 100+ degree actual temperatures here the next few days. No telling what the "feels like" temp will be with the humidity factored in. Wow.

Many of you have been in a similar heat wave that we have down here, and it sure feels like it will never end, even though summer actually only "officially" started this week! Yeah, okay...

We all seem to be suffering with this heat.

This recipe is based on one that was popular back in the early 1980s among The Telephone Pioneers of America and was featured in their community cookbooks, Bell's Best and Calling All Cooks.

It was called Macaroni Casserole back then, because it was generally made with elbow macaroni. I used rotini pasta for my version because I had an opened box I needed to use up. Waste not, want not!

Wow, has this cold and flu season been a challenge for me this year. You hear about how frightening it is around the country, but when it hits home and you experience it in your family multiple times, it's exhausting. 

The Cajun, who is exposed to those pesky little germs much more often than me, and has such a strong constitution and rock solid immune system, he's done well fighting it, unlike me. I'm feeling okay today, but that seems subject to change at any time this winter. Hope y'all are faring better than I have, whew!

This southern heat seems to get harder and harder on this old body every summer and it has been unbearable some days, to the point where a minute outside is more than enough. When it's not hotter than hot, it's raining. Like bucket-loads kinds of rain. There were a few times I thought the Gulf Coast was gonna float away into the Gulf of Mexico!

My gardens that were so beautiful this spring, are now loaded with weeds, but with the heat index it's impossible to get out there long enough to make a difference. Doing it early in the morning or late in the afternoon just means getting carried away by gnats. It's just a no-win situation!

Hey, y'all should be very proud of me!! I have managed to post more than two recipes in August so far. Seems Grandma Mary needed to get her back-to-school routine going too I guess. :) Just in time too, because fall is right around the corner now, and I've still got some summer left to share yet!

I love a good pasta salad in the summer and I sure can make a meal of this one.

This is my copycat recipe for Crawfish Monica, a spicy, rich and creamy crawfish and pasta dish, extremely popular and once found only at a booth at the New Orleans Jazz & Heritage Festival - a long running music event held in New Orleans. With two stages of soul-stirring music, from jazz, to gospel, to Cajun and zydeco, rock, funk, blues, Caribbean and so much more, and more southern, Cajun, Creole and international foods than you can shake a baton at y'all.  If you've never been, you really should put it on your bucket list for sure.
