It's pretty easy to make a pasta salad, and you don't really need a "recipe" so to speak. You just toss some cooked pasta with favorite vegetables, sometimes some kind of protein and dress it with a favorite salad dressing and voila, you've got a pasta salad!

Of course, you may not be able to recreate that combination unless you wrote it down and that's where a recipe comes in handy.

This pasta salad is one of those that went viral on social media, though, as usual there are lots of comments from folks talking about how they "have been making this all of their lives!"

Football season is king around this house with my husband, aka The Cajun. He loves the game, so I'm always looking for a good appetizer to snack on when it comes to game time, and this is a great one.

Typically made using phyllo cups, those can be a little hard to find around here for some reason. One day when I was adding my standard tortilla chips to the grocery list, I was reminded about the tortilla scoops. I thought hey, I bet those would work for those little snacks I like to make.

Turns out, somebody had already thought of that, so I made the adjustment and frankly, it worked out well!

The Cajun's Dad always had an abundance of shrimp on hand. Nice ones too, many jumbos.

Back in the day, the family owned a small shrimp boat, so the boys would go out with Dad for a day of shrimping. When I was a kid, most young men and yes, even some gals around here too, would have experienced working on a shrimp boat at some point in their lives. Most families were involved in the industry and it was just part of the culture then.

When The Cajun went out, we would put up about 100 pounds of fresh from the Gulf shrimp that day. What a blessing!

So, the other day I had a craving for spaghetti.

I know, crazy, right? Mostly folks have "cravings" for sweet things, but me, I'm more of a savory kind of gal, so when I get a craving it's more likely it's for some kind of savory comfort food.

Maybe chicken and dumplings. Or tacos. Lasagna. Or those little burgers like Krystal's. Roast Chicken. Chicken Pot Pie. Homemade Mashed Potatoes. That sort of stuff.

Anyway, this specific time after our recent carb-heavy holiday meal, I was craving meat and more specifically meat sauce. I started to just make my normal semi-homemade spaghetti sauce, but then, I thought...

C'mon now y'all... what's not to love about a chicken salad with avocado, bacon and pecan?

Well, I for one can attest - it is delicious!

I've noticed when engaging on social media that a lot of folks favor and have one signature chicken salad that they make all of the time and that most everybody knows them for. It's the one that they always bring to events.

I guess in that case, mine would be what I call my deli-style version, a very basic but delicious version, though I've made multiple variations of that one over the years, this being one of them!

Whew y'all! It's been super-hot and humid here along the Mississippi Gulf Coast and we're heading into a couple of 100+ degree actual temperatures here the next few days. No telling what the "feels like" temp will be with the humidity factored in. Wow.

Many of you have been in a similar heat wave that we have down here, and it sure feels like it will never end, even though summer actually only "officially" started this week! Yeah, okay...

We all seem to be suffering with this heat.

Bacon and Egg Fried Rice

Recently we went to a hibachi dinner for a birthday celebration, and I think half of my plate was fried rice, so I had a good bit of it leftover to bring home. Okay with me!

It was so barely seasoned though, that I wasn't really super excited about eating it, but I figured I would get it home and play around with it because I hate wasting food and I absolutely love fried rice.

Dips are one of my most favorite appetizers! Well, that and wings. And cheese balls. Ah heck, just about any appetizer really... but dips are super easy to make and so tasty.

I especially love the dips that are intended to served cold, because you don't have to worry over keeping them heated up. Just set them out on a sidebar or the coffee table, and forget about it to enjoy the game, or the party!

What's not to love about biscuits? I sure love them and probably a little too much, as I love a wide variety of them. Sometimes, I just get a craving for biscuits y'all. That's it. Biscuits. Just biscuits!

Yes, I understand that when you are new to biscuit making, they can be frustrating and a challenge to perfect, and frankly, there really is only one solution to that. Keep making biscuits! The old rule of practice makes perfect really does apply here.

New Year's Day food is just about played out in the house. I made both my black-eyed peas and the cabbage with sausage and tomatoes, plus the rice of course, in my Instant Pot! Well, Instant Pots because I had three of them going!

Yesterday though, The Cajun and I were enjoying the opening of NFL playoffs (quite exciting they were), so I thought I would make a dip I've been wanting to try forever and kept forgetting about. It's a variation of a recipe from one of the Sweet Potato Queen's books {affil link}, that she calls Heaven on a Cracker, and it is rich and delicious.

A few years back one of our readers, Brian, was looking specifically for a Bacon Spaghetti recipe. Although I make some variation of my semi-homemade version of spaghetti most often, and in the summer, you just cannot beat a homemade sauce from those fresh from the garden tomatoes, I do love mixing things up with spaghetti recipes too. I don't know why using bacon as the base meat never really occurred to me!

Sometime after that, I was browsing through the Notes archive on my Facebook page, and ran across a recipe called Okie Spaghetti shared by another reader Linda a few years before. I used her recipe as a base for this one, adding in my own spin, of course!

I didn't have nearly as many tomatoes or cucumbers this year. Early on, in the spring, they did great, but then by June we had constant, heavy rainstorms - which, by the way haven't stopped - intertwined with heat indexes in the triple digits - that haven't stopped either - and the tomatoes really suffered.

Guess I'm either going to have to start from seed so I can plant earlier, or else just forget about it and hit the fresh market weekly for my tomato fix!

Okay all you kindred cabbage lovers - if you've been around here any length of time, y'all know how much I love the stuff... though to be honest, 99.9% of the time when I pick up a new head of cabbage, thinking I'll bring something different to the blog, good intentions fall the wayside and I end up making fried cabbage. What can I say? It's an easy dish, and it really is my number one favorite.

Oven bacon is the easiest way to cook a lot of bacon at once, but first, I want to address a subject that interestingly several long time readers have contacted me about recently, and that is to ask what I think about this new low carb trend among some southern food bloggers, to which I respond, "there's a trend??"

Between family, grandchildren and work, I don't get out much across the interwebs so I wasn't aware of this, but y'all tell me there has been, and seriously, I'm not at all surprised to see some southern food bloggers taking the low carb path. Here's why.

Pasta salads aside (which I adore), I love bringing a fresh garden salad to an event, potluck or cookout. It sort of balances out what seems to always be an overabundance of meats.

In the summer, that is most likely some kind of a cucumber salad or a layered salad, and this BLT salad falls right into that category. I mean, who doesn't love a BLT sandwich to begin with, but turn those flavors into a salad and it's really a hit!

Hey, y'all should be very proud of me!! I have managed to post more than two recipes in August so far. Seems Grandma Mary needed to get her back-to-school routine going too I guess. :) Just in time too, because fall is right around the corner now, and I've still got some summer left to share yet!

I love a good pasta salad in the summer and I sure can make a meal of this one.

Sunday I made a pork tenderloin. You know the ones - the packages of pre-seasoned pork loins that you literally don't have to do a thing to except pop in the oven or on the grill? Yeah, that's the one. My mother in law picks them up on sale from Winn Dixie all the time and the Cajun happened to comment how good one was when we were over there one Sunday. Lo and behold, next thing I knew she was sending him home with a couple. I told y'all, she's like that!
