Old-Fashioned Lard Biscuits

Old-Fashioned Lard Biscuits

Back in the day, whole neighborhoods and families gathered in the fall for the boucherie hog slaughter and the big feast and celebration that went with it. Although there are a few old-timers left, that art has all but dried up with rare exceptions in some of the most rural areas of the country.

You know. Those places where folks actually do still live off the land and raise their own meat, instead of buying it at a grocery market.

Back then, the preferred fat for everything, including biscuits, would have been the rendered pig fat. Lard. And, truth be known, lard was commonly used back then all across the country.

Butter Swim Batter Biscuits

How can you just not be in love with a biscuit that has "butter swim" in the name? I mean seriously y'all!

These biscuits have been making the round on the internet for awhile now, so I thought I'd finally give them a try, well, my way. All I can say is they sure did not disappoint! Not one bit.

So, as if I needed yet another entertainment source to distract me, I subscribed to Discovery+ and I have to say, I really enjoy the channel.

One of the first things that I did, was to binge watch one of the new featured shows, Magnolia Table, after which I felt compelled to pick up Joanna Gaines cookbooks. Now, a confession.

What's not to love about biscuits? I sure love them and probably a little too much, as I love a wide variety of them. Sometimes, I just get a craving for biscuits y'all. That's it. Biscuits. Just biscuits!

Yes, I understand that when you are new to biscuit making, they can be frustrating and a challenge to perfect, and frankly, there really is only one solution to that. Keep making biscuits! The old rule of practice makes perfect really does apply here.

I am a bread lover - especially yeast breads and rolls. But biscuits?

Yeah, biscuits are more common in my house and I make them fairly regularly. Certainly, biscuits are faster and easier, but still delicious all on their own, and the variety is endless, though classic buttermilk are still the ones I make the most.

Easy Spoon Biscuits

Easy Spoon Biscuits

This recipe has been around a long, long time, but I've been seeing a form of these all over Facebook here recently as "no yeast rolls," though that's a bit of a misnomer because they aren't rolls at all. I mean, in my eyes, yeast is what makes a roll a roll and gives it that special lift and texture.

This is more like a quick batter bread really, that's poured into a muffin tin for little individual biscuits, similar to those muffin tin spoon rolls, that actually are made with yeast, but are just as easy as these biscuits.

Hand-Formed Buttermilk Baking Powder Biscuits

There are a lot of 30-somethings around me who are on low carb diets right now, taking spin classes, working out and running marathons. They all look great too! Seeing as I could certainly afford to drop more than a few pounds myself, I wish I was that motivated at my age to do any of that, I really do. But I'm not.

I also wish I could live without those white flour carbs, but, but... biscuits!

I don't make them regularly (though lately I've made them a few times more than usual), but for sure, I just can't imagine a life without real biscuits! And yeast bread. Oh, and pasta too. Those are my biggest weaknesses in the world of white flour carbohydrates.

Classic Strawberry Shortcake Cake

A dense, lightly sweetened cake, perfect for sugar-sweetened, syrupy strawberries and whipped cream.

Classic Strawberry Shortcake Cake

Strawberry shortcake. It's a very simple dish really, but so good! Freshly sliced strawberries left to soak in a little sugar until a syrupy glaze forms, then spooned over a sweetened, biscuit-like dense cake, with those gorgeous sweet juices drizzled on top and finished with a dollop of whipped cream. Now, that's an easy and delicious dessert.

Truly, you can use any good biscuit recipe and sweeten it with a bit of sugar for a decent strawberry shortcake. I certainly have. Cream biscuits are especially good, however, a more classic shortcake, which back in the day, often appeared in the form of a single layer cake, is something that will hold up to those juices!

Cathead Biscuits

It's hard to believe from modern-day biscuits, that southern biscuits were once teeny, tiny little things. Not so much anymore, because like many foods, we've super-sized them!

Who can blame us, though. From skillet biscuits, to cream biscuits, to sweet potato, classic buttermilk and everything in between, we do love our biscuits in the south and we pretty much love them large.

Enter, Cathead Biscuits.

Galettes - Skillet Biscuits

Galettes Skillet Biscuits

These skillet biscuits, what we call galettes down here along the coastal south, are for those times when you just want a biscuit but don't feel like all the mixing, cutting in, rolling and baking. They are quick and delicious, whether it's with a dab of butter alone, or served with jam, jelly, preserves, honey or cane syrup.

The term galette can cover a lot of culinary territory from pies to flat pastries, to pancakes, to cakes, to biscuits. Just depends on the culture, I guess. For us, it comes from the French Gulf Coast population in the form of a hand shaped biscuit, fried in a skillet, like a fry bread.

Galettes are sometimes made into one big biscuit, as with my biscuit bread, but mostly they are like a fry bread or a fritter. In some places around the country, they are called flitters, or flitter bread. Pinches of dough are pulled off, rolled into balls and then flattened to about 1/4 inch thick. To avoid overcrowding skillet and chilling the oil, cook them in batches in hot oil until browned on both sides.

Ham and Cheese Biscuits

Ham and Cheese Biscuits

These are great breakfast or brunch biscuits served alongside some fluffy eggs or even as a base for an egg sandwich. I like to use a sweeter honey ham for these, but any good smoked ham works fine too. With the self rising flour, ham and cheese, I don't usually add any additional salt, so do keep that in mind if you're tempted to add some.

Make mini biscuits for that next party and serve with some good pepper jelly - yum y'all!

I'm a lover of sweet potatoes in pretty much any form you can make them - baked, fried, glazed, roasted, grilled, mashed, cut up into soups, in casseroles, in a pie or quick bread, and yes, even in a classic biscuit!

Garlic Cheddar Drop Biscuits

Since I still had some baking mix in the pantry, leftover from my annual holiday sausage cheese balls, I thought it'd be a good time to use some to publish these drop biscuits with garlic and cheese. These yummy biscuits were made famous by Red Lobster restaurant's Cheddar Bay Biscuit of course, and the multitude of copycat recipes that resulted from it. This is the copycat version that I ended up with after a few trials.

Cream Biscuit Strawberry Shortcake

Despite the sweltering summer heat and threat of hurricanes, I truly do love living in this area of the Deep South for many reasons, one of which is that we get an early taste of many seasonal veggies and fruits - and right now, that's strawberries.

These are the biscuits I made to go with my post for Cream Biscuit Strawberry Shortcakes, but they are such a lovely biscuit all on their own, that I wanted to plant them in a place of their own. The only difference is those have sugar and these do not.

Old Fashioned Biscuit Bread

Though skillet bread has been around since pre-Colonial times, this biscuit bread was likely a staple during the Great Depression and probably most often eaten for breakfast, typically just torn from the cake, rather than cut.

If mixing up, rolling out and baking traditional southern biscuits makes anxiety rise in you, these little bite sized drop biscuits are so easy it's sinful.

It's also sinful the amount of fat in them, so if you're a deputy on the fat police patrol, just move along please. There's nothing for you to see here.

Garlic Cheese Biscuits

I know canned biscuits are pretty darned good and mighty convenient - heck I have a general purpose can of them in my fridge right now. Let's face it. They put some biscuits on your plate pretty quick, but they are especially good to use as a shortcut in recipes too.

That aside, who doesn't really love a homemade biscuit? And everybody seems to be super crazy about copycat Red Lobster garlic cheese biscuits (for the record, these are not those). Well, I haven't exactly had one of those in ages, so I won't even try to say this resembles those, but tell me, how can you not love a homemade biscuit combined with garlic and cheese? I know I sure do and the other night I just decided I had to have some!

These are a super tender, light, and melt in your mouth biscuit perfect for a slather of butter, wrapping around slices of salty ham, or spooning over with sausage gravy or tomato gravy.

The texture of these are just a bit different from old fashioned buttermilk biscuits, more soft and creamy, with a touch of sweet.

Now, we Southerners love yeast breads, no doubt, but biscuits ... light, fluffy, lovely biscuits are just near about a staple down South and by default, my most favorite biscuit is my own homemade.

Trust me when I say this - if you think you can't make perfect, fluffy biscuits, you can! Go here and put my biscuit secrets to work, and you'll have perfect biscuits every time.
