You've probably seen Million Dollar Dip and Neiman Marcus Dip all around the internet at some point. As to bloggers of food, it seems to be offered everywhere!

Million Dollar Dip was originally known simply as Almond-Bacon-Cheese Spread and later as Neiman Marcus Dip because that's where the original developer of the recipe, Helen Corbitt, happened to work as Director of Food Services at the Neiman Marcus restaurant, Zodiac Room in Texas, where it is said many of her recipes are still offered.

I suppose that's true of a lot of dishes in Southern cooking - like corn casseroles for instance. In truth, it really all depends on one thing, and one thing only.

It's very rare that I use canned biscuits on a regular basis for biscuits.

I understand people love them, and yeah, they make quick biscuits for sure, but personally I prefer to make my own biscuits from scratch for biscuit consumption. There's just no comparison.

These biscuits have been making the round on the internet for awhile now, so I thought I'd finally give them a try, well, my way. All I can say is they sure did not disappoint! Not one bit.

Hot Water Cornbread

Hot water cornbread is a fried cornbread, tender on the inside, thanks to a precook of the cornmeal with boiling water, and crispy on the outside from a quick fry in a blazing hot cast iron skillet.

What sets this fried cornbread apart from its cornbread cousins, is the boiling water, giving the meal a head start on cooking and resulting in an inner creamy texture, with an outside crunchy crust.

Goes well with chili, beans and southern peas, though I'll be honest with you. I can make a meal from a plate of them!

One of the first things that I did, was to binge watch one of the new featured shows, Magnolia Table, after which I felt compelled to pick up Joanna Gaines cookbooks. Now, a confession.

What's not to love about biscuits? I sure love them and probably a little too much, as I love a wide variety of them. Sometimes, I just get a craving for biscuits y'all. That's it. Biscuits. Just biscuits!

Yes, I understand that when you are new to biscuit making, they can be frustrating and a challenge to perfect, and frankly, there really is only one solution to that. Keep making biscuits! The old rule of practice makes perfect really does apply here.

Unless you live down in this part of the Deep South, you've probably never heard of this dish. Often referred to as a Cajun breakfast, cornmeal cereal, though it's enjoyed just about any time of the day. It comes under a few different names, including  Cush Cush, Couche Couche or Coush Coush, all pronounced "coosh-coosh."

Although some folks will want to compare this to a cornmeal mush, it's actually quite different.

If you're a parent or grandparent who has had the occasion to attend a child's elementary school lunch in recent years, you know that kid's school lunches are nothing like the ones we used to enjoy as children. Back in the dark ages when I was in elementary school, lunches were home-cooked meals, and many my age have fond memories of cafeteria favorites - brownies, goulash, even sloppy joes seem to top the list, but the one I find most often mentioned are those homemade yeast rolls.

Many of us have been on a quest for a roll that is as close to those amazing homemade yeast rolls from our elementary school memories, but in more reasonable batches. Fresh baked in the morning, you could smell those rolls all over the school, getting a symphony of tummy rumbling going.

It's hard to believe from modern-day biscuits, that southern biscuits were once teeny, tiny little things. Not so much anymore, because like many foods, we've super-sized them!

Who can blame us, though. From skillet biscuits, to cream biscuits, to sweet potato, classic buttermilk and everything in between, we do love our biscuits in the south and we pretty much love them large.

Enter, Cathead Biscuits.

These skillet biscuits, what we call galettes down here along the coastal south, are for those times when you just want a biscuit but don't feel like all the mixing, cutting in, rolling and baking. They are quick and delicious, whether it's with a dab of butter alone, or served with jam, jelly, preserves, honey or cane syrup.

The term galette can cover a lot of culinary territory from pies to flat pastries, to pancakes, to cakes, to biscuits. Just depends on the culture, I guess. For us, it comes from the French Gulf Coast population in the form of a hand shaped biscuit, fried in a skillet, like a fry bread.

Galettes are sometimes made into one big biscuit, as with my biscuit bread, but mostly they are like a fry bread or a fritter. In some places around the country, they are called flitters, or flitter bread. Pinches of dough are pulled off, rolled into balls and then flattened to about 1/4 inch thick. To avoid overcrowding skillet and chilling the oil, cook them in batches in hot oil until browned on both sides.

I have a favorite garlic bread butter blend that I have been using for years. It's an awesome blend for garlic bread that not only goes with many meals, but I also use some form of it for other things, like my over the top cheesy bread, my French bread pizza with a twist, and an oven toasted garlic bread that adds a sprinkle of Parmesan to the mix, and what this is patterned after.

I love them all, though my biggest problem with any of them I guess, is that I am a complete and total bread addict. I. Love. Bread. And, I can easily overeat it.

Melt some butter, brush it on some bread, sprinkle a little garlic powder on top, pop it in the oven and you're done. True.

But, this is a step up from that and it's the butter blend that I've been using for my basic garlic bread for years.

Homemade yeast rolls are my favorite, but let's face it. They do take an investment of time.

In order for the yeast to fully develop and provide that fluffy, light roll instead of a biscuit, you need that nice, long double rise... and that takes time. It's definitely worth it, but for that reason, most of us reserve a good homemade yeast roll only for special occasions and holidays, or we buy them frozen.

The cornbread that most of our grandmothers made was fairly straight forward - not much more than cornmeal, a leavening of some kind, a little salt, and some kind of fat which might be lard, or bacon drippings or even the addition of an egg, but often not.

Sometimes there would even be a touch of buttermilk, but not always.

The majority of the time, I keep my cornbread pretty simple too, but every once in awhile I do like a change, usually depending on what I'm serving, and this sour cream cornbread has been a reliable recipe handed down for years.
