So, I was going to remake this Strawberry Angel Cake dessert that hadn't received much attention since I first shared it years ago. You know, get some new extended step photos, a new header, update the post, that sort of thing, but then I thought...

I know, I know... I'm always fooling around with my recipes, especially the older ones, but I guess that's the beauty about being a developer and blogger of food recipes - and one who has been doing it for so long now!

Anyway, I thought instead of revamping that recipe, I'd combine some of the elements of it with various other similar desserts I've written over the years and write a whole new recipe and you know what? The result was excellent!

I have sure been enjoying fresh strawberries here lately and at any given time there are usually two pounds in the fridge. Right now I'm seeing Louisiana berries the most in the markets, and they sure are delicious.

Honestly, I don't often do much with strawberries in the way of a recipe. While I enjoy them occasionally in a frozen or layered dessert, a cobbler, pie or cake, or even simply macerated and spooned over a shortcake or a slice of pound cake, I mostly just eat them in their natural state. Add a little homemade egg custard though, and how can you go wrong with that?

Strawberry shortcake. It's a very simple dish really, but so good! Freshly sliced strawberries left to soak in a little sugar until a syrupy glaze forms, then spooned over a sweetened, biscuit-like dense cake, with those gorgeous sweet juices drizzled on top and finished with a dollop of whipped cream. Now, that's an easy and delicious dessert.

Truly, you can use any good biscuit recipe and sweeten it with a bit of sugar for a decent strawberry shortcake. I certainly have. Cream biscuits are especially good, however, a more classic shortcake, which back in the day, often appeared in the form of a single layer cake, is something that will hold up to those juices!

I guess cobblers are about as popular in the summer as anytime for us southerners. We just turn on the oven and crank down the air conditioning here in the humid deep south. I guess we contend with high summer electric bills like folks up north do with heating bills in the winter.

Could you imagine only ever having a winter cobbler made with canned peaches? Not that there's anything wrong with that - I love those too - but I sure love a cobbler made from fresh fruit when those fresh summer peaches arrive, as much as I do a cobbler made with the luscious fresh berries of summer we all love too.

Punch bowls have a long history in the South and this dessert is a perfect one to ring in spring. Back in the day before hiring a caterer was the norm, families provided all of the food and labor for big parties and family events, and every family had a treasured punch bowl, almost always one that had been passed down a few times.

I had all but forgotten about this vintage dessert until my daughter-in-law's grandmother Mimi showed up with a pan of it at one of our holiday gatherings. Not only is it delicious as it always was, but it's a perfect dessert for Valentine's Day too!

Frozen Strawberry Pretzel Salad

 
I took two great Southern classics, Frozen Strawberry Dessert and Strawberry Pretzel Salad, and combined elements of both to make this Frozen Strawberry Pretzel Salad, made with cream cheese, frozen strawberries, banana, pineapple and whipped topping on a salty, pretzel crust.

I know its officially fall on the calendar finally, and some of y'all in those areas of The South farther north from here are seeing cooler temperatures and thinking about soups and stews and pumpkin and apple and oatmeal recipes. Down in The Deep South, and most especially the coastal Deep South, summer is still roaring along. I'll sure be glad when I can give my A/C a little break, but for now it's blasting away, trying to keep things cool around here.

Oh my goodness, do I love an icebox cake! They are so easy to throw together, making them great for those, who, like me, aren't especially high skilled bakers, they make as pretty a presentation as any layer cake does, and it doesn't hurt at all that they taste pretty darned good too.

Take the elements of a banana split - bananas, pineapple, strawberries, whipped cream, chocolate syrup, maraschino cherries, and chopped nuts - layer that on top of a cookie crust, throw in a layer of that fabulous cream cheese, powdered sugar, whipped cream mixture as a stand-in for the usual ice cream, and you have one well loved Layered Banana Split Dessert.

I tell you what, the good Lord sure knew exactly what he was doing when he planned for ripe and juicy tomatoes, cucumbers and watermelons right in the midst of The Dog Days of Summer Down South.

They are, every one, cooling foods, loaded with water and we've sure been eating our share of them here lately, no doubt. If you're heated up, I promise you that a big ole slice of ice-cold watermelon will cool you down right quick and well, I thought, why not take some and turn it into a granita?

Y'all, it's like instant air conditioning.

This Southern Strawberry Sweet Iced Tea is a quick and delicious variation of my southern sweet iced tea that is a nice refreshing change from the usual. You can certainly use your own usual tea recipe, or even make adjustments to mine in the strength of the tea, the sweetness, the tartness of the lemon and the level of strawberries to suit your own taste.  Make it your own, but I hope that you enjoy it as much as I do.

I first found this recipe in Southern Living magazine several years back, but have since revised it by adding more strawberries and less vanilla. It is a wonderful light and low fat dessert for spring or summer and perfect for right now when strawberries are so perfectly sweet and delicious. It could not be any easier, either.
