Cabbage and Kale Chicken Strip Salad

My homemade take on the viral TikTok fast food salad hack, made with a kale salad base, dressed with a honey mustard vinaigrette and topped with honey and hot sauce tossed crispy chicken tenders.

The inspiration for this salad came from a video that passed my timeline on social media one day.

The gal shooting the video was sitting in her car in the parking lot of Chick-fil-A with a drive through order. The hack was with their Kale Crunch Salad and an add on 3-piece chicken strip meal which she tossed in the box with a packet of buffalo sauce and honey. She tore the strips with her fingers and topped her salad with them.

I thought it sounded good and since I don't have a Chick-Fil-A nearby, I got one of those well "I can make that at home" vibes y'all.

Italian Chopped Salad Sandwich

An Italian chopped salad of lettuce, assorted Italian meats, black forest smoked ham, salami and provolone cheese, finished with olive salad and a homemade creamy Italian dressing, served on a hoagie or sub bun.

Y'all may remember this sandwich circulating on social media awhile back. I think it started as a TikTok Italian grinder sandwich with all of the meats layered up on a roll like you'd get at any good sandwich shop. From there, it appears that somebody thought to chop it all up together like a salad and then pile it on a bun.

Brilliant!

As always, multiple variations arose from whatever the original was as everybody put their own spin on it. Most of them actually do chop up the tomato with the rest of the ingredients but I really didn't want the juices of the tomatoes mixed it, so I opted for adding the tomatoes sliced to dress the final sandwich, if someone wanted them and then finished with a creamy dressing.

Sensation Salad

This salad is a slight revision of the well-loved salad found in the Junior League of Baton Rouge's River Roads Recipes II cookbook.

While it became more widely known across Louisiana and her sister states from the cookbook, it actually originated as a creation of a now closed, Baton Rouge restaurant called Bob and Jake's, and soon took on a viral life of its own among other local area restaurants.

Yessireebob... that there is what you call a main dish salad!

I know it's supposed to be fall but it's still pretty hot here in the Deep South, so I haven't moved away from summertime eating quite yet, and what a beautiful salad for one of the last salutes to summer!

This is a salad, that at least back in the day, was well known in the New Orleans and coastal Mississippi areas, when it had a rather colorful, totally inappropriate and not very politically correct name, which if you're from around here you know exactly what I am talking about.

I'll just leave it at that. It's what the Friendship House referred to as a combination salad, with lettuce, tomatoes, olives, shrimp, boiled eggs, loads of veggies and a garlicky tomato based dressing.

BLT Salad

 
A layered salad made with thick cut bacon, crunchy iceberg lettuce, summer ripened fresh red tomatoes and substantial and chunky croutons finished with a homemade Ranch dressing.

Pasta salads aside (which I adore), I love bringing a fresh garden salad to an event, potluck or cookout. It sort of balances out what seems to always be an overabundance of meats.

In the summer, that is most likely some kind of a cucumber salad or a layered salad, and this BLT salad falls right into that category. I mean, who doesn't love a BLT sandwich to begin with, but turn those flavors into a salad and it's really a hit!

A mixture of lettuces and various toppings, here topped with broccoli, bacon, mandarin oranges, dried cranberries, dressed with a sweet and sour dressing and topped with a buttery almond, pecan and ramen noodle crunch.

I love this salad. It's sort of a hybrid of Ramen Noodle Salad, Mandarin Orange green salad and Broccoli Salad with a few extras thrown in.
