I first learned about this recipe from an Oklahoma friend, Tommie. She and I met on a low carb board online many years ago and she's inspired quite a few recipes here on the website! (She's actually done a whole lot better with the low carb thing over all these years than I have, but I digress...)

Her family calls this one "The Greatest Queso That Ever Lived!"

I've since learned from social media that a few people have shared a similar secret ingredient queso, so I finally got around to trying Tommie's version, and I have to say... trust me on this. It's really delicious y'all!

Never would I ever have thought to use this ingredient in queso, even though it's actually a staple in my kitchen as it is in many other southern cooks' kitchens, but... who knew?!!

We're kind of in that awkward stage of food seasons down here along the Gulf Coast. Summer is gone from the calendar and mostly along with all the great summer vegetables, and though fall has arrived, the weather here can get a little wacky. Some days cooler, then others downright summerlike.

One thing is for certain this time of year though.

Tis the season for football and football means appetizers and snacks! Sandwiches, wings, meatballs, gumbo, chilis, soups, snacks, a wide variety of finger foods and dips, of course! You can grab up some ideas by tapping on those categories, or right here at this link.

When you say Black-eyed Pea Dip, most folks think about Texas Caviar, or what I call Southern Caviar because all across the south, we tend to have our own versions, like my Mississippi Style Texas Caviar. It's a type of bean salsa, usually made using some form of an Italian dressing as a base.

This is not that.

This is more of a basic bean dip but made with black-eye peas instead of the more often used pintos or white beans.

Veracruz Hot Corn Dip

A hot corn dish, Veracruz Corn may be served as either a side dish, great alongside your barbecue, or as a hot corn appetizer with crisp tortilla chips. Filled with goodness of fresh, off the cob corn, marinated in a fiery blend of Southwestern seasonings, tossed with veggies and then dressed with a chipotle aïoli and cheese, and passed under the broiler.

I based this corn dish off of one that I saw in Eva Longoria's cookbook, Eva's Kitchen: Cooking with Love for Family and Friends. It sounded a little like maque choux, but with some spicy flair, which it most certainly has!

Veracruz corn was a popular dish on the menu at the now shuttered Beso Steakhouse in Hollywood, owned by Longoria, and though I believe it was considered a side dish on the menu, I really enjoyed it best as an appetizer, served hot with some crisp tortilla chips.

New Year's Day food is just about played out in the house. I made both my black-eyed peas and the cabbage with sausage and tomatoes, plus the rice of course, in my Instant Pot! Well, Instant Pots because I had three of them going!

Yesterday though, The Cajun and I were enjoying the opening of NFL playoffs (quite exciting they were), so I thought I would make a dip I've been wanting to try forever and kept forgetting about. It's a variation of a recipe from one of the Sweet Potato Queen's books {affil link}, that she calls Heaven on a Cracker, and it is rich and delicious.

Shrimp Rotel Dip

This is a variation of the classic and ever-popular Rotel Queso Dip, with the addition of shrimp and often ground beef, though ground turkey, pork or sausage or even a combination works well too. I personally love it with breakfast sausage the most, over them all!

Most recipes use a larger shrimp, sometimes whole, sometimes chopped up, but I find the small salad sized shrimp to be a perfect choice. There are lots of them in a pound and they're just the right chip size.

There's a dip that's being passed around Facebook called Texas Trash Warm Bean Dip. I have no idea why it has that name, but it passed by my timeline so many times that I decided to give it a whirl. I mean if you love beans, and especially refried beans and bean dips, how can you lose with beans and cheese, right?

I was poking around in my Trisha Yearwood's Home Cooking cookbook again and ran across this recipe for her Charleston Cheese Dip. Trisha said it was her take on a dip she had while on tour one year with a stop in Charleston.

As far as I know, this Mississippi Sin Dip recipe got its start just being called plain ole Mississippi Sin because of it's cheesy richness, but along the way, it apparently became a tailgate favorite of the fans of Mississippi State Bulldogs and has since become known as Mississippi State Sin.

I notice a few other states seem to have picked it up over time and renamed it as their own, but as far as I know it originated right here in some kitchen in my home state. Far as I know, this is pretty true to the original recipe with the exception of jalapenos, which I added.

Okay. I know that saying this is an "awesome" dip is a pretty bold statement but I think it's pretty awesome. A layered, deconstructed version of a jalapeno popper in a dip, that I've never seen done quite this way, and since I didn't have outside influences, I'm claiming it as my own original recipe.
