I ran across this recipe in a 1977 The Southern Junior League Cookbook (#ad), which is a collection of recipes from different Junior Leagues across the south. Talk about an oldie but goodie! This recipe was submitted by the Huntsville, Alabama group and in the cookbook is called Hot Crab Sandwich.

I had never heard of anything like it before and I just so happened to have a half pound of crabmeat that I needed to use up, so thought I'd give a half recipe a try, although I did make a few changes, including to increase the egg.

Y'all. This turned out to be so absolutely delicious that I wished I would have made the full casserole! I do think while it would certainly make a great addition for any holiday breakfast or brunch, it'd be great for any other time too!

Seafood Cornbread Dressing


There are so many different kinds of dressings out there, the most common ones in the South being one made with cornbread, another made including chicken and the other with only staled bread in the form of sandwich bread, French bread or leftover rolls or biscuits and the addition of herbs.

I've made cornbread dressing both with and without any kind of bread, but I find that I prefer the texture of cornbread dressing when it includes some bread with the cornbread. It's another one of those Southern things that folks tend to argue about though, because there are some who will tell you that only cornbread should be in your cornbread dressing, and that is the only way.

Well. Y'all know what I say about that!

We're kind of in that awkward stage of food seasons down here along the Gulf Coast. Summer is gone from the calendar and mostly along with all the great summer vegetables, and though fall has arrived, the weather here can get a little wacky. Some days cooler, then others downright summerlike.

One thing is for certain this time of year though.

Tis the season for football and football means appetizers and snacks! Sandwiches, wings, meatballs, gumbo, chilis, soups, snacks, a wide variety of finger foods and dips, of course! You can grab up some ideas by tapping on those categories, or right here at this link.

Several years back, I was looking through a Martha Foose cookbook, Screen Doors and Sweet Tea, that contained a recipe for what was called a seafood pan roast. Since The Cajun and I don't eat out much, this was an unfamiliar dish for me.

At the time, I couldn't find much about it around the internet either and even today there still isn't much out there. I went ahead and made it, but with no photos to let me know if I was anywhere on track let's just say mine didn't turn out quite right. With the cost of seafood, I abandoned it to experiment a bit more thoroughly another time.

Crabmeat au Gratin

Crab au gratin is a delicious, decadent treat for sure, because, unless you are doing your own crabbing, boiling and picking, it can be a pricey dish for sure. If you've ever done any of the above though, you know the work that goes into picking crabs, and the effort required to get those nice, large lump pieces, so it's worth the price.

This dish can be used as an entrée, served with a nice garden salad and some hot French bread, or as an appetizer, served with some nice, sturdy crackers. As an entrée, I prefer to serve it in individual au gratin dishes {affil link}, though it can also be prepared in a casserole dish and spooned out onto plates. It's much more atheistically pleasing in the individual dishes.

I started off intending to make this chowder with some frozen crawfish tails, that I was sure I had in the freezer. Unfortunately, after having to hurriedly rearrange things and transfer stuff from the refrigerator freezer, to the deep freeze, courtesy Hurricane Zeta, it was just faster and easier to grab some shrimp.

No worries. They are delicious too! The only difference really, is the flavor that comes from the fat in the crawfish, but honestly it's a good chowder either way. You can even use a combination of the two, or throw in some crab as well. Although not as popular down here, clams may also be substituted. Oysters as well.

From the time that I was a little girl, tying down chicken backs into crab nets on a Biloxi pier with my Grandma Mac, fresh crabs have been such a central part of my life.

In gumbo or stuffed into the shell, made into crab cakes or patties, stuffed into po'boy bread, or jumbo shrimp, in pasta, even that hot crab dip that shows up at pretty much every event in existence around here, I can't even imagine a life without some fresh blue crab in it.

Crab Salad

This salad has been a favorite for me many years, and you may remember something similar called the Seafood Sensation Salad from Subway, where you could get it on a sub or in a salad. I used to get them for lunch in my corporate working days, loaded up with vegetables. While mostly removed from their menu, I think you can still find it at Subway in some markets, and you will probably find some version at your local grocery store deli.

Now... I realize that some of y'all are gonna get mad at me, because while ingredients vary, this salad has always been made with imitation crab or in combination with imitation lobster. Relax a bit.

What some areas of the country refer to as Frogmore Stew or "low country boils," are simply called seafood boils here in the Deep South, and they might involve shrimp, crawfish or crabs. With access to the best seafood, boils are actually a favorite addition to summer cookouts here along the Gulf Coast, and certainly one of my favorite parties to attend. If there's a boil-master manning a massive outdoor cooker that's loaded with Gulf seafood, I'm definitely in!

These are a treat that's a real throwback for sure, because for me they are another recipe that dates back to the 70s. I call them crab melts, though they have picked up a number of names over time, including crabbies, crabmeat bites, crab pickups, and crab canapes, to name a few.

This is a great coastal Deep South seafood pasta salad that is pretty common down here, and I love it, although it's more often known as Imitation Crab Salad.

I know, I know... imitation crab seems to scare some folks as if it's some kind of weird, alien substance, pretending to be food, when really, it is generally just a basic mix of Alaskan Pollock, King Crab meat and other seafood, and, it actually works great for salads like this. Personally? I really love it in this pasta salad.

Crabmeat and Cheese Po'boy and The Old Biloxi Vancleave Special

A Crabmeat and Cheese Po'boy, known locally as a Vancleave Special, is made with seasoned, thin crab patties, served on po'boy bread with mayonnaise, cheese, shredded lettuce, sliced tomatoes and pickles. Add a cup of gumbo and a cold Barq's root beer in the bottle.

It rained long yesterday, ahead of a cold front that will be bringing some welcomed lower humidity and temperatures for a day or three again. I love a good rainy day though, especially now that I work from home and don't have to make that 60-mile, round trip commute on a dangerous interstate highway.

Honestly, with a legal career that was already stressful enough, the stress started well before I got there with that drive most days. It was a fine paying job, and I really enjoyed my work until Hurricane Katrina took it away, but honestly, there are so many things that I really don't miss about it anymore.

Like chili, I'm always piddling around with my seafood gumbo recipes, trying to reach that one perfect gumbo my mama used to make.

Piddling around. Yes. That's a legit phrase in the Deep South!

Think of it as such a leisurely, relaxed approach to preparing that next pot of gumbo that you're willing to try something different instead of being a stickler to the same old same old.

For this crab heavy version, I decided to use a little more onion, bump up the okra to a full pound, and not take my roux quite as dark. I thought for a sweet, crab-based gumbo, this more mellow roux would be a bit more fitting, than the richer, dark and more full bodied roux I often use.

There once was a local seafood restaurant called Catch of the Day, where us gals used to gather on occasion after a long day at the office.

Okay. It may have been more often than occasionally that we gathered to gossip, moan and complain about work and co-workers, over a nice tall glass of Long Island iced tea and listen to a little music.

It was quite a popular after-work place there for a few years.

I have this basic seafood stuffing mix that I use for many different dishes, so this weekend when I was making Stuffed Flounder, I figured it was about time to get the stuffing recipe up all on its own.

It's a very versatile mix that can be used to stuff large butterflied shrimp, to make patties for Vancleave (crabmeat and cheese) po'boys, to stuff large mushroom caps, hollowed out eggplant and squash of all types, and other vegetables, fill crab shells, or to make pan-fried crab cakes, to name just a few.

We've had a quick shot of wintry weather in The Deep South, for at least a few days anyway, and a good chowder made with corn, crab and a little cream, really hits the spot when that cold weather blows in. It's been such a hot fall that as much as I love them this time of year, thinking about soups, stews and chowders has been hard to do frankly. Leave it to The South to go from beach weather to frost in about 8 hours! Apparently we decided to just pass by fall altogether - gotta love The South! Course, we'll be back to beach weather in no time, which explains why my garden looks like a laundry right now, with sheets and blankets strewn across many of my plants.

Crab Stuffed Mushrooms

Stuffed mushrooms are one of my favorite finger-food party snacks, but for these, I grabbed some stuffer caps - the bigger mushrooms already cleaned and ready to stuff - from my local and most favorite grocery store, Rouse's Market.

You can use any kind of mushroom that can be stuffed of course, just be sure to save the stems and include them in your stuffing mix.

I had thawed out two packages of shrimp thinking that I would either make gumbo or fry them, but when I realized these were some of the larger shrimp, I knew they were worthy of something just a bit better.

I thought very seriously about grilling them, but then remembered that I had not yet done a stuffed shrimp for the website. Besides. Once you get the image of a crab stuffed shrimp in your head, well, you're bound to have to go there!

Gulf Coast Style Pan Fried Crab Cakes

A mixture of seasoned crab and a light binder of freshly toasted bread, pan fried in a bit of butter and oil. Serve alone as-is, or with spicy horseradish mustard, spicy mustard sauce, jalapeno cream sauce, remoulade sauce, or comeback sauce.

I've previously posted some oven baked crab cakes - great when you are trying to reign in the fat for a bit - but these pan fried crab cakes are the more traditional way to go down here.

This recipe is essential a standard crab mix that I use for a variety of dishes with some variations here and there that I use to make crab patties for po'boys, or stuffed crabs, stuffed mushrooms, stuffed flounder and of course, these pan fried crab cakes.

Add a nice mixed garden salad and a green veggie to round it out.
