It's been a minute since I've spent anytime at all in a bar whether it's around town or on vacation, but I do remember a time where there were freely available snacks available.

Mostly they were intentionally savory and salty, purportedly to encourage your thirst so you'd buy more drinks!

These days it's more about offering paid for appetizer menu items, or if there are any kind of snacky freebies, it's typically small plates of food or appetizers called tapas,

We're kind of in that awkward stage of food seasons down here along the Gulf Coast. Summer is gone from the calendar and mostly along with all the great summer vegetables, and though fall has arrived, the weather here can get a little wacky. Some days cooler, then others downright summerlike.

One thing is for certain this time of year though.

Tis the season for football and football means appetizers and snacks! Sandwiches, wings, meatballs, gumbo, chilis, soups, snacks, a wide variety of finger foods and dips, of course! You can grab up some ideas by tapping on those categories, or right here at this link.

I love wings. Love them!

They are one of our top favorite foods for football gatherings, movie watching or really anytime snacking.

I used to do them most of the time in the oven and still do occasionally but they are ideal and so easy in the air fryer.

Now... first a disclosure because it's important and it matters.

I am not a big fan of microwave kettle corn - it's either not very flavorful, or just too overly sweet for me. But Homemade Kettle Corn with spicy Cajun seasoning?

Count me in!

I was watching Food Network once when Melissa d'Arabian's show came on and she happened to be making some kettle corn.

When I noticed she added in cinnamon, I was intrigued!

When you say Black-eyed Pea Dip, most folks think about Texas Caviar, or what I call Southern Caviar because all across the south, we tend to have our own versions, like my Mississippi Style Texas Caviar. It's a type of bean salsa, usually made using some form of an Italian dressing as a base.

This is not that.

This is more of a basic bean dip but made with black-eye peas instead of the more often used pintos or white beans.

Don't you just feel fancy when you're at a restaurant where they still have a shrimp cocktail on the menu? I tend to order one when they are, but even when I don't, I kinda light up when I see somebody else get one delivered to their table. It's a little luxurious to me! Hey, what can I say. Those little small things make me happy! I had a bag of jumbo shrimp in the freezer that I needed to use so thought that it would be a good time to get a shrimp cocktail recipe up.

Sure, there's always basic cocktail sauce, simple lazy man sauce, or even super-flavorful Comeback Sauce, that we whip up in a hurry for our boils, and any one of those works just fine for dipping boiled shrimp. Yes, you can even buy it all bottled up for you at the grocery store, but when we have these nice, beautiful jumbo shrimp that we want to use for an appetizer - like for a holiday menu - well, they deserve a little step up, if you ask me!

In the world of my favorite old school appetizers, these Hankie Pankies are right up there in the category some folks call "trash" food as 7-Layer Mexican DipSausage Balls, Chex Mix and Rumaki. I made these for our Super Bowl party and oh my goodness they are soooo good y'all!

I actually drafted the recipe to the blog years ago and have made them several times, but just never got around to publishing them for some reason. One thing is for sure - there are just not a lot of ways to photograph these little bites of deliciousness to make them look pretty, but heck... the taste sure makes up for it.

Summer means BBQ and one of the biggest BBQ holidays of the summer is just around the corner - Independence Day! It's one of my favorite holidays with time spent with friends and family and festivals galore along the Gulf Coast the entire weekend.

For those of us who live here, it often means time spent on the boat out and on the barrier islands, followed by backyard cookouts with all of our favorite summertime foods and songs like Lee Greenwood's classic "God Bless the U.S.A.," droning in the background.

QVC host David Venable was noshing on some little stuffed pizza bites during a recent Sunday In the Kitchen with David show in late January. The show was centered around appliances and tools for making recipes that were football centric for the Super Bowl.

I already have a terrific sausage bread that can be varied to make pizza bread, but those little bites just looked so darned good that I knew I had to make them. Of course, as always, I took quite a few liberties with his recipe, but David was certainly the inspiration behind these little bite sized jewels pictured here.

Chicken Bombs - The Ultimate Jalapeno Chicken Poppers

 
Boneless, skinless chicken breasts, cut into thin tenders, then pounded and stuffed with a cream cheese, cheddar cheese, jalapeno popper blend and rolled, dabbed with barbecue sauce, wrapped in bacon and finished with a sprinkle of brown sugar.

If you're looking for the ultimate appetizer, I think that you'll love these Bacon Wrapped Chicken Poppers.  They are a bit labor intensive, but simply delicious and a fantastic finger food addition for your party.

Inspired by Warren's Chicken Bites in Trisha Yearwood's cookbook Home Cooking, I decided to take bacon wrapped chicken a little bit further. Basically, I married my Fried Jalapeno Poppers with my Spicy Sweet Bacon Wrapped Chicken to create this Jalapeno Chicken Popper.

Sausage and Cheese Bread

Thawed frozen bread dough or refrigerated pizza dough, makes this appetizer bread stuffed with seasoned hot sausage and cheese super easy.

A perfect appetizer for any party, this Sausage and Cheese Bread made from homemade or refrigerated pizza dough or thawed frozen bread dough is a definite crowd favorite.

Regular Italian sausage works great for this, but I prefer to use the hot version of Jimmy Dean breakfast sausage and add shredded pepper jack cheese for the extra kick they both give. Together with the onion and bell pepper, that is really all the seasoning you need. If you're making it for tailgating, bake it, let it cool, wrap it in foil and warm it up on the grill before slicing.

I have really been loving the panko breadcrumbs ever since they became more widely available in our supermarkets. 

Yes, y'all... I'm going back the future here for the future you who shows up here and says... "what?" 

Believe it or not, once upon a time, not so long before this, it was near impossible to find panko breadcrumbs in any grocery store. You really had to seek them out in a specialty food store. I know! Hard to believe isn't it, but it's true, and yes, now I'm feeling OLD!!

This hot wing recipe came about when I happened to have a couple pounds of wings to use but wanted to do something different.

I remembered back around St. Patrick's Day flipping through my copy of Food Network Magazine and seeing a St. Patrick's Day wing recipe. I know ... Wings? St. Patrick's Day?

Not exactly associated with one another in my opinion, but in my opinion, wings are great anytime, and though their wings were done with a green hot sauce for the upcoming holiday, I thought why can't I do a hot wing in the oven with regular ole Louisiana hot sauce? This was the result!

As far as I know, this Mississippi Sin Dip recipe got its start just being called plain ole Mississippi Sin because of it's cheesy richness, but along the way, it apparently became a tailgate favorite of the fans of Mississippi State Bulldogs and has since become known as Mississippi State Sin.

I notice a few other states seem to have picked it up over time and renamed it as their own, but as far as I know it originated right here in some kitchen in my home state. Far as I know, this is pretty true to the original recipe with the exception of jalapenos, which I added.

Commonly found at weddings, bridal showers and parties of all kinds in The South, they are a delightful and cool lunch and a great way to use some of those summer cucumbers. Most often served on thin, white bread, crusts removed, and sliced into quarters, and honestly, a bit addictive.
