Last year, Dolly Parton, together with her sister Rachel, published a cookbook called Good Lookin' Cookin' (#ad) and y'all know, with a name like that, I had to grab me one!


On page 23, there was a recipe for an open-faced sandwich that they called "Chicken Feed," a recipe they had received from a friend years ago and one that had become a family favorite ever since.

I love a good chicken salad recipe and occasionally I enjoy adding lettuce and tomato to my chicken salad sandwiches, but it had never occurred to me to include them in my chicken salad!

Enter me browsing through some of my old cookbooks and seeing this recipe in the cookbook Bless Your Heart: Saving the World One Covered Dish at a Time (#ad), and y'all, it also adds in the unusual ingredient of shredded cheese, so I knew I needed to give it a try!

Good gracious the heat!

As I publish this here in July we've been under an extreme heat warning, not just the average heat warning, for days. I'm intensely thankful for air conditioning these days, and frankly the ability to pay for it cuz y'all... it ain't cheap for sure!

How's that heat going for the meal planning here lately?

I love a good chicken salad, and my standby is still the one I lean on the most. It's a good solid deli-style chicken salad and I love it.

Since entering this food blogging experience many, many years back though, I've tried a bunch of different ones, so when I saw Elizabeth Heiskell making this one on social, I got a little curious.

Now. Pickles are a thing I do love in my chicken salad, but I use relish or pickle cubes usually and most often I lean toward a sweet relish.

I'm sure by now you've seen some version of this Angel Chicken recipe, because it's literally all over the internet. It's usually made in a slow cooker, but if you've been around here any length of time you know I'm not a huge user of that appliance in general.

Oh, I like it just fine, especially for those tougher cuts of meat that need a longer cook time. It's not my favorite mostly because it involves advanced planning which I'm not that great at doing! Still, readers here enjoy using a slow cooker, so I've shared a few recipes here and there.

Chicken breasts in the slow cooker though? Those are my least favorite protein to cook in one.

Cajun Chicken Stew with Potatoes and Egg


A chicken stew made with the trinity and a roux is pretty common in Cajun country, whether it's with or without the addition of potatoes or boiled eggs.

Adding either of those to a stew or gumbo was common, potatoes to make a stew fill more bellies and boiled eggs to extend the protein because, at least at one time, eggs were a pretty inexpensive source of protein that would substitute for a lack of meat.

Economics aside, it's still a tradition in many families!

The Cajun and I eat wings often and not just because there's a football game or party going on, although both of those times are common for sure! Our local Winn Dixie even has a great wing bar and we've visited that for a bucket of wings a few times.

As to my own recipes, you'll sometimes see that when I share a recipe for wings, the whole wing is in play and I've not separated my wings into drums and flats at all. I mean, it's just the two of us most of the time and frankly that's just another step.

I love chicken and dumplings but you know what? Although drop dumplings are and will always be my favorite, I'm not particularly married to chicken and dumplings done one way and one way only.

I'm just too adventurous for that!

There are so many different methods and even types of dumplings out there and I like trying them all. Hey, life is short, right?

One thing is for certain. A big bowl of stewed chicken with dumplings is comfort food 101.

I actually do have a few, but one of my top favorite kitchen aromas is of a roasting turkey or chicken.

Not only is it a great statement of a delicious meal on the way, it really invokes a lot of memories for me. Growing up, the holidays and the meals surrounding them, were a very important part of my life. I sure do miss those days.

My husband, aka The Cajun, is pretty set in his taco consumption and not very willing to branch out.

Seasoned ground beef on crunchy taco shells and dressed with a little bit of tomato and lettuce and lots of cheese. That's it.

Me, I'm open to pretty much any variation out there. Shredded beef. Ground turkey. Ground chicken. Shredded chicken. Shrimp. Fish. Steak. Pork. Even potatoes and eggs. I love them all!

Like many Southerners, I love fried chicken, especially when it's prepared well. Although pretty rewarding in the end, it is a little messy frying it at home though and frankly takes practice,  meaning you need to keep making it often to perfect the processes!

You know. Like Grandma did.

For those reasons, lots of folks satisfy those occasional fried chicken cravings with take out these days and while really great fried chicken can be found at sit down restaurants, you can also find it at locally owned gas station counters, at regional grocery store delis like Winn Dixie and Rouses in my neighborhood, at local sit down or take out buffets like Hartz, Cajun's and Broome's and fried chicken places like Popeye's and KFC.

The one problem? Have you seen the prices?

The inspiration for this began with the BBQ Glazed Chicken in Pioneer Woman's most recent cookbook Dinner's Ready (#ad).

As soon as I saw the picture, my mouth watered so I thought that I would try it with some boneless, skinless chicken breasts I had and my own rub.

I loved the way this turned out y'all!

When we talk about spaghetti, most everyone first thinks about spaghetti noodles in a tomato-based sauce that has either a ground beef base or meatballs. Delish!

But, there is a whole world of spaghetti to be had out there y'all!

Down here along the Gulf Coast, shrimp spaghetti is a top favorite, as is a Creole daube made from a roast, along with an andouille based spaghetti but, there's also veggie spaghetti, cowboy bacon spaghetti and many others to be had also.

Oven Braised Bone-in Chicken Breasts with Vegetables

This dish was inspired by a recipe in Frank Stitt's Southern Table, a cookbook he describes as Provençal-influenced southern food. In other words, fancier than me!

For this dish, essentially a coq au vin, he prepared a sauce made with the accumulated juices and both a white and Madeira wine that was reduced as a sauce. He served the chicken next to an Autumn Root Vegetable Puree made with boiled and pureed turnips, carrots, parsnip, sweet potato and rutabaga and a glazed ragout of Autumn vegetables, made with roasted beets and pan-sauteed cipollini and pearl onions and carrots, with apple wedges, quartered potatoes, turnips and slices of parsnip, served alongside.

Whew!

Chefs do tend to get a little fancy, but for little old home cook me, well, I needed something a bit more simplified.

This is one of those quick, easy, tasty meals that you can make when you aren't highly motivated to cook.

Yes! Believe it or not, that happens to me too sometimes.

That's one thing that I love about the Instant Pot - or any other branded electronic pressure cooker for that matter. That one appliance can make a quick and easy job of making a meal, unlike its cousin the slow cooker, which I rarely use because of the advance planning, early start and length of time required.

I don't buy a lot of rotisserie chickens.

Not that I don't love them, because I do, and not that they aren't convenient, because they sure are. It's just now that I'm finally seeing whole chickens showing up on sale again here lately, I always pick up a couple of them.

Sometimes I bake my own rotisserie style version in the oven, or I grill one or smoke cook it on the Traeger (#ad). Other times I use the Instant Pot (#ad), and I'm loving the way that the air fryer works for a whole chicken too.

I have about a half dozen full recipe posts for different chicken salads, though some of those have multiple variations in the notes that I've also tried over the years, and yet more in drafting stages.

In the meantime, chicken salad is such a good and easy meal, especially during these extended southern dog days of summer and I lean on it a lot.

Y'all. Summer is coming to an end soon and I am not unhappy about it.

While I know many of you, including some of my very good friends who also live down south, and those of you who live in cold climates especially, y'all do love the heat of summer. I don't. And, it gets HOT in the Deep South. Fall can't come quick enough!

While I don't eat it every day, and I rarely cook it at home anymore because it can be a bit messy, I do LOVE fried chicken.

Absolutely love it.

The chicken is tender. The coating on the deep-fried skin is so deliciously crunchy and loaded with flavor, it may well be my most favorite part. With easy access to places like Popeye's, and our local fried chicken buffet Hartz, fried chicken is The Cajun's and my top comfort food. We probably eat it more often than we should!
