Even though I run this recipe website, I'm still like many of you. In between recipe development and getting things in a form where y'all can recreate it in your own kitchen, I have some days where I'm just not super inspired about what I want to eat, or even whether or not I even feel like cooking!

Gotta love a one pot pasta meal that doesn't include having to precook the pasta!

That's the case with this meal, a one pot meal that is somewhat in line with the Pastalaya recipe I've shared before. That recipe has the classic flavors of a chicken and sausage jambalaya, in a quick and easy skillet pasta dinner.

I don't buy a lot of rotisserie chickens.

Not that I don't love them, because I do, and not that they aren't convenient, because they sure are. It's just now that I'm finally seeing whole chickens showing up on sale again here lately, I always pick up a couple of them.

Sometimes I bake my own rotisserie style version in the oven, or I grill one or smoke cook it on the Traeger (#ad). Other times I use the Instant Pot (#ad), and I'm loving the way that the air fryer works for a whole chicken too.

To say that I love pasta would be an understatement.

Thankfully so does my hubby, aka The Cajun, so we eat some sort of pasta dish regularly and one of my favorite ways to make pasta is in the Instant Pot!

Now, to clarify, just in case you're happening on my website for the first time, first, welcome! Second, come join us over on our Facebook page because I feature a lot of my past recipes there every day, and third, when I speak of the "Instant Pot," it is often in the context of using it as an electronic pressure cooker, though technically speaking it is a multi-function pot, and it is only one brand of said families of multi-pots. There are many others out there, all of which work with the recipes here designated as "Instant Pot," when used with the pressure cook function.

One-Pot Skillet Spaghetti

Spaghetti is such an easy meal that it's pretty much one of the first meals that everybody learns how to make.

Sometimes it starts as simply as boiling some noodles and topping it with a quality commercial sauce. Then it might graduate to adding beef, pork, or even a mix, chicken or seafood, using a mix of canned tomatoes instead (Cento San Marzano highly recommended) - and even better if they are home canned!

Hands down my personal favorite is a spaghetti made in the heat of the summer, from fresh, homegrown, backyard tomatoes.  You just can't get that flavor any other way. Yum y'all.

Although most of the time when I make spaghetti, I use my favorite semi-homemade recipe. It's easy, it's reliable, it's tasty, and The Cajun absolutely loves it. That's really what counts the most, isn't it?

Still, spaghetti is so easy to make and delicious that I also like to mix it up a bit from time to time. In the summertime when the backyard tomatoes are in abundance, you just cannot beat a homemade, fresh tomato sauce and my big batch recipe is enough for two meals - spaghetti, usually followed by a lasagna or ziti. When the garden is overflowing with fresh vegetables, there's my veggie spaghetti, and my smaller batch fresh tomato pasta sauce is fabulous for those weeknight meals.
