I actually do have a few, but one of my top favorite kitchen aromas is of a roasting turkey or chicken.

Not only is it a great statement of a delicious meal on the way, it really invokes a lot of memories for me. Growing up, the holidays and the meals surrounding them, were a very important part of my life. I sure do miss those days.

This is one of those quick, easy, tasty meals that you can make when you aren't highly motivated to cook.

Yes! Believe it or not, that happens to me too sometimes.

That's one thing that I love about the Instant Pot - or any other branded electronic pressure cooker for that matter. That one appliance can make a quick and easy job of making a meal, unlike its cousin the slow cooker, which I rarely use because of the advance planning, early start and length of time required.

If you're from the south, when you first saw the words "Creole" and "fried chicken" in the title to this recipe, you may have had certain expectations.

A southerner would likely expect any chicken that claims to be "fried chicken" to be one that has been dredged in seasoned flour and deep fried.

A southerner from the Deep South would expect a recipe claiming to be "Creole" to have the typical influences of tomato along with the trinity of onion, bell pepper and celery.

You'll find that neither of those elements apply to this Cuban-Style Creole Fried Chicken!

I have to admit, I don't cook outside as much these days. The heat is just too hard on me as I've gotten older, and it gets hot as a match in the summertime here! I mean, I was filling bird feeders yesterday and just in that short time I thought I was gonna die!

Though I haven't let go of my stack smoker, Weber, Lodge Sportsman, or my gas grill, of all of the cookout tools I have, I still love my Traeger pellet cooker {affil link} the most.

I love a good baked chicken and though I have a few different recipes that I've used over the years, this is one of my favorite ways to make it.

We often find whole chickens, as well as family-sized packages of thighs and legs, or large block frozen bags of leg quarters on sale around here, so that's what I usually use for this dish. You can certainly use breasts, and even wings, though you'll need to adjust times accordingly, depending on size, so as not to overcook, especially with the boneless breasts.

Baked chicken is certainly not unique to the South, of course, but there is a certain way that we prepare it that makes it a little more unique to our region - just chicken, simply seasoned and baked with a scattering of the trinity, the way we love it in the South.

One Pot Italian-Style Chicken Stew


This is a good and hearty, one-pot, Italian style stew, though "stew" is really a loose interpretation here. It's hearty, but not thick and rich as we think of stews to be, but rather a bit lighter, making it fully appropriate any time of the year.

I based my recipe on a bit of a combination of MarkCharles Misilli's One Pot Italian Chicken from the cookbook Easy Everyday Favorites and Jacques Pépin's Chicken Bouillabaisse in his cookbook Fast Food My Way {affil links}, since I find them to be strikingly similar.

Chicken Cacciatore

Chicken Cacciatore, an Italian-American comfort food meal, also known as Hunter's Chicken, is made from a whole, cut up chicken, lightly dusted in flour and browned in hot oil, then slow braised in a light tomato sauce with onion, sweet bell pepper and mushrooms.

Also known as Hunter's Chicken - or chicken in the style of the hunter - and said to have typically been a dish made using whatever wild game had come from the day's hunt - though today chicken is king.

There is no doubt that Chicken Cacciatore, or Pollo alla Cacciatora, is an authentic Italian dish, though in my Italian cookbook, The Silver Spoon {affil link}, it contains plain unfloured chicken, seared in butter and oil, includes onion, celery, carrots and tomatoes, and is finished with a toss of some fresh parsley. It also states that in some regions of Italy it is heavier in celery and carrots than their recipe, in others white wine is added and in others yet, sliced mushrooms.

Country Captain Chicken


There are a lot of theories about the origins of this dish, none of which is set in stone, although both Georgia and South Carolina have definitely laid claims to it. Legend has it that it's a dish that a ship's captain carried to America as a result of the spice trade, perhaps through the ports of Charleston or Savannah.

It's a one-pot, butter-browned, curried chicken dish, appearing to be Indian in origin, typically made with bone-in, skin-on, whole cut-up chicken, or most often, only chicken thighs. If you want to cut back on fat, you could get away with boneless, skinless thighs, with the understanding that the loss of bone and fat is also loss of flavor, and you'll need to compensate with cooking time and seasonings.

Old School Baked Chicken and Rice

With the usual errands and chores of life, it can sure make for busy days and I'm happy to turn to the old school dishes like this chicken and rice when days are super active. It's simple - throw it all together and throw it in the oven. This truly is old school y'all, as it's been around as long as I have, but it's delicious too!

Sometimes called "no-peek" chicken, I like to uncover it toward the end of cooking to brown the top of the otherwise pale chicken.

I thought I would experiment with the vintage cranberry chicken bake recipe, and like the other, use a bit of Creole or Cajun seasoning to spice it up a tad, but this time, I decided to add in some pomegranate juice.

What a delightful addition it was!

The pomegranate just gave this an extra tangy punch above the cranberry and produced a nice sauce, even better than the usual.

I had a large, 5-pound package of chicken thighs in the freezer, though unfortunately they were the kind frozen into one big blob and not individually so I pretty much had to thaw and bake the whole package.  Whatever isn't eaten up in leftovers will be deboned and frozen to use in casseroles or maybe some chicken salad.
