This southern heat seems to get harder and harder on this old body every summer and it has been unbearable some days, to the point where a minute outside is more than enough. When it's not hotter than hot, it's raining. Like bucket-loads kinds of rain. There were a few times I thought the Gulf Coast was gonna float away into the Gulf of Mexico!

My gardens that were so beautiful this spring, are now loaded with weeds, but with the heat index it's impossible to get out there long enough to make a difference. Doing it early in the morning or late in the afternoon just means getting carried away by gnats. It's just a no-win situation!

Old School Baked Chicken and Rice

With the usual errands and chores of life, it can sure make for busy days and I'm happy to turn to the old school dishes like this chicken and rice when days are super active. It's simple - throw it all together and throw it in the oven. This truly is old school y'all, as it's been around as long as I have, but it's delicious too!

Sometimes called "no-peek" chicken, I like to uncover it toward the end of cooking to brown the top of the otherwise pale chicken.

Baked Spaghetti is a fantastic meal for any day, but most especially for feeding a crowd, making it perfect for potlucks, church suppers and social events

This one has been a favorite around my house ever since the first time I made it. It comes from the cookbook Home Cooking with Trisha Yearwood {affil link}, another favorite, and it is simply delicious. Now in all fairness, I know that this recipe is representative of what most folks think of when they think of chicken spaghetti. I really don't consider this to be a true "chicken spaghetti," since my Grandma - Grandma Mac of the pound cake fame - made a killer chicken spaghetti that was my all time favorite dish. Her chicken spaghetti was made with a whole hen and a red sauce similar to a beef based spaghetti, it was not baked, and it contained no cheese whatsoever.

Easy Sour Cream Chicken Enchiladas

When I decided to make these white chicken enchiladas it was because I had acquired ten pounds of boneless, skinless chicken tenders and needed to start coming up with ways to deplete some of them.

Yes, these are a little different from a red sauce, authentic Mexican style, corn enchilada. There are more of a Tex-Mex style, using a white sauce, which can be shortcut by using cream of chicken soup (which I often do), and sour cream, a little jalapeno and shredded cheese, Pepper Jack cheese if you like a bite, all rolled up in a flour tortilla. Speed things up by using pre-cooked chicken or a store-bought rotisserie chicken.

Okay. So yes, this is a bit of a "cheater" cheesy potato soup, but that doesn't mean it isn't good. And who needs to know but you?

There is one convenience product that I use a goodly bit and honestly, it's pretty much a staple down here in the south. In fact, I'd be willing to bet that you could open just about any pantry around town and find any number of varieties of this wonderful canned product.
