Classic French Onion Dip


I love onions! I use them for seasonings in most cooking, though my preference is and always has been sweet over the harsher yellow onions, and certainly Vidalia onions, when they are in season. I'll even eat those raw on burger and dogs or with beans.

I have a couple of favorite onion dips using Vidalias that are marvelous! One is made with onions and pepper jack cheese, topped with buttery crackers and bacon, and served hot. The other is a cold dip, but made with caramelized onions. This classic onion dip that most everybody knows, and loves, is actually pretty simple in its origins. An envelope of dry onion soup mix combined with a large carton of sour cream, done and done. And, it's pretty darn delicious in and of itself!

Sausage and Cheese "Hissy Fit" Dip

A hot dip, made with breakfast sausage, a mix of cheeses, sour cream, Worcestershire, hot sauce, vibrant seasonings and green onion. Serve with your favorite crackers, chips or assorted raw veggies.

If y'all have been hanging around here any length of time, you pretty much know that any kind of dip - from that good old fashioned 7 layer dip that's been around forever, to my more delectable hot crab dip (and everything in between) - are party favorites for me. Though I do actually favor hot dips over cold, I have to say that this corn dip, served cold, is downright delicious and even a tiny bit addictive!

Well, with all that nice, spicy boiled shrimp, classic cocktail sauce is a common condiment to use for sure, but I thought another sauce was in order. One of the best to accompany boiled shrimp is a good rémoulade.

Lazy Man's KetMayo Sauce

A dipping sauce blend of equal parts ketchup and mayonnaise, nicknamed KetMayo, has loads of black pepper and a dab of horseradish and works well with a variety of foods.

Lazy Man's KetMayo Fry Sauce

This is The Cajun's favorite, general purpose dipping sauce. What can I say? He's a very simple man. I suspect most of it is that besides having a good taste, it's easy to remember. He uses this for just about anything - boiled seafood, fried seafood, and chicken strips, though it's good for French fries, onion rings, fried pickles, and well, a lot of things really, including as a sandwich spread. Since it's a simple combination of ketchup and mayonnaise, I call it KetMayo - akin to a sauce served by a similar name at one of our local restaurants.

One thing I will definitively say is that this is not Comeback Sauce.
