Y'all. I feel so left out about onion sauce, or more specifically, pushcart onions. I had never even heard of them before now!

Food trucks aren't a big thing where I live, though we do have a few around here and there. We don't exactly have pushcarts here in the Biloxi area either, although Lucky Dog pushcarts do exist in New Orleans and apparently now in Bay St. Louis, over on the Louisiana/Mississippi state line. I've had a few of their dogs over the years.

You'll certainly find hot dog vendor booths at our festivals, though I'm more likely to buy a corn dog there than a plain hot dog!

I love cucumber, tomato and onion salad combinations and I eat them constantly over these hot summers, so I am always playing around with them.

It's pretty amazing how subtle changes in the same basic ingredients can completely alter the texture and taste in them and the dressing on this one is a great balance between tart and sweet to me.

I love onions! I use them for seasonings in most cooking, though my preference is and always has been sweet over the harsher yellow onions, and certainly Vidalia onions, when they are in season. I'll even eat those raw on burger and dogs or with beans.

I have a couple of favorite onion dips using Vidalias that are marvelous! One is made with onions and pepper jack cheese, topped with buttery crackers and bacon, and served hot. The other is a cold dip, but made with caramelized onions. This classic onion dip that most everybody knows, and loves, is actually pretty simple in its origins. An envelope of dry onion soup mix combined with a large carton of sour cream, done and done. And, it's pretty darn delicious in and of itself!

I had several requests for the recipe I use for the pickled onions pictured with my turnip greens, so I promised to squeeze it in here over the weekend, between all the holiday posts for turkey and dressing and all those side dish goodies we're all looking forward to here in a few days.

The British have their pickled pearl onions, often served as an appetizer at local pubs, but the South, well, we have our own version of pickled onions. You'll most often find ours served family-style at catfish houses, right alongside the all-you-can-eat fried catfish, turnip greens, coleslaw, fried okra, and cornbread.

Yes! It really is still summer, I swear. If you don't believe me, c'mon down to the Deep South, and I'll show you what heat and humidity are like in September along the Gulf Coast. We were at the Biloxi Seafood Festival this Saturday with the grandkids, and it was as hot as it has been all summer, though we did have a nice cold front pass through Sunday.

Temps have been down in the mid-80s with low humidity for a few days and it has been just gorgeous. Only those of us who live our lives in the South understand that is considered "nice and cool."

If you're a lover of Vidalia onions like I am, isn't that just a thing of beauty? I mean really! How I love these sweet Vidalia onions in the summer, and I cry, quite literally, when they are gone until the next season rolls around and I have to use those stronger yellow onions. Sometimes I have to step outside just to clear my eyes, but that never happens with my sweet Vidalias.

French Onion Soup

French Onion Soup is a well loved winter favorite, and it's as loved in The South as it is anywhere. But... it does take patience to make.

It is so worth every single second of the time. Caramelized onions simmered in a deep, rich beef stock, and topped with crusty bread or croutons and gooey cheese. I wish I could convey to you how delicious this soup is. I truly say it is the best French onion soup I have ever made. Is your mouth watering yet?

I believe it earns the name French onion soup when it has the cheesy topping, traditionally Gruyere, though you can certainly use whatever cheese you prefer. Don't hold me to that name thing, since I've never dipped a single toe in French territory myself, unless you count the area of the Deep South that I'm from.

This is another great recipe to use those prolific summer squash, garden fresh tomatoes and even some of those bell peppers too. I just had to show the image below, which shows the pre-breaded squash because the stuffing is just so fresh looking.

I know those skinny onion string haystacks are all the rage across the blogs these days, and I love those too. On a burger. Or on top of a salad. But when I want a side or a snack of onion rings, first I want the onions sweet - and that calls for a sweet Vidalia onion - but then, I want them nice and thick.

And they must be crunchy.

And, light.

And not at all greasy.

Hey, I have my standards, even with onion rings.

A simple, but tasty southern favorite, this cucumber salad is made of very thinly sliced fresh cucumbers and is dressed with a boiled sweet and sour vinegar dressing.

Just as the name says, this is a spicy cucumber salad with a boiled sweet and sour dressing made with vinegar and sugar. If you prefer not to have the heat, just eliminate the red pepper flakes, and, if you like things more on the sweet side, just use equal parts vinegar and sugar, or adjust the sugar up according to your taste.
