Classic Southern Tomato Pie

Tomato pie, using simple fresh ingredients - juicy tomatoes and fresh herbs, layered in a flaky pie crust, with sweet onion and cheese. Dress the top with the traditional mayonnaise and cheese mixture, and you've got a classic southern tomato pie.

Yes! It really is still summer, I swear. If you don't believe me, c'mon down to the Deep South, and I'll show you what heat and humidity are like in September along the Gulf Coast. We were at the Biloxi Seafood Festival this Saturday with the grandkids, and it was as hot as it has been all summer, though we did have a nice cold front pass through Sunday.

Temps have been down in the mid-80s with low humidity for a few days and it has been just gorgeous. Only those of us who live our lives in the South understand that is considered "nice and cool."

Pillsbury Grands Mini Biscuit Topped Mini Chicken Pot Pies

Thanks to MyBlogSpark, I recently had the opportunity to try Pillsbury® Grands!® Frozen Mini Biscuits, the new, tiny freezer-to-oven biscuits from your grocer's freezer case.  Now I love my own homemade biscuits, and I'll be honest. I had never tried these.  Lawdy mercy, they are good!  Fantastic piping hot and straight out of the oven, I loved these. I mean look y'all, seriously.

They are the cutest, tiny little biscuits, about a Southern Belle three-biter, and fluffy on the inside but with that loveable crunch on the outside that we southern cooks are already endeared to, only with a smaller surface area.  Translate:  ♫More crunch y'all!♫

Old-Fashioned Double-Crust Chicken Pot Pie

A couple of food bloggers here recently near about apologized for posting dishes that they had been having tastes for, but that some people might consider to be "off season." I don't even remember what it was now, but that doesn't matter.

What struck me was that, well, if I have a taste for a certain dish, a craving if you will, I'm gonna make it, no matter the time of year! It's just silly I tell you, because frankly, down here in the Deep South, we have pretty much one season 90% of the time. Hot.
