If you've been around this website for any length of time, you know I don't post a lot of steak "recipes," because, well, I prefer ribeyes and while I may change up methods, I really just don't fool around with those much!

Usually just a quick 30-minute marinade in some Dale's, Country Bob's, maybe a little Hoover sauce from The Mississippi Delta, when I have it or most often, just plain ole Worcestershire sauce, and that's about it.

Marinated Grilled Ribeye Steak Sandwich

Inspired by a popular sandwich from a local hole in the wall tavern, this ribeye steak is marinated in a flavorful blend, then grilled, served on pistolette rolls and dressed simply with grilled onion, mayonnaise, lettuce and tomatoes. Serve with chips and a pickle spear.

If you're from Biloxi, you likely know of The Project Lounge, and at some point in your life, you've probably been there too.

Though they moved from their original location near Highway 90 on the beach to a little bit further away near Keesler Gate 7, they have always been known for being a dark and smoky bar, but they are also well known for their hamburgers and steak sandwiches.

Okay. I have to admit. I have been seeing copycat recipes for this thing called Mongolian Beef all over the place for years.

Although an American creation and not authentic Chinese cuisine, it seems it's a favorite from P.F. Chang's restaurant, a place I have been to exactly once in my life. That visit was in Texas of all places, when we were there visiting family. I actually don't even remember what I ordered there to be honest, except that while it was good, it wasn't the Mongolian Beef.

I love soup, and yes, around here it is usually featured as a main dish meal, accompanied by some kind of bread, crackers or a sandwich, rather than just a starter soup course to go along with an entree of some kind.

For the most part, I want those soups to be quick and easy, although there are times I do put a little bit more of my time into them.

I have truly enjoyed having an Instant Pot. Even though, much like the whole air fryer thing, I was skeptical, I own several pots now and I use them all the time!

For plain rice, rice dishes and boiled eggs. Potatoes for both mashed potatoes and potato salad or just for a side. Fresh green beans and carrots and cabbage and dried beans, done in no time. Pork roasts and ribs and pulled pork. Soups and stews and chicken, especially good for chicken and dumplings. And, given enough time, it's great for a nice, tender pot roast too.

It sure is fantastic for a quick pasta meal!

Okay. I'm not gonna lie. When I first thought to do a ribeye steak, my favorite cut of steak, in an air fryer, boy was I leery about it.

I mean a good ribeye steak, besides being my favorite, is not cheap, and I was so fearful of ruining it! When I cook steaks, they are grilled most of the time, whether it's outside or inside on a countertop grill. (I love my Ninja Foodie grill and use it multiple times a week!)

Who remembers a hot roast beef? You don't hear much about them these days, but basically, it's an open-faced roast beef sandwich, served over plain or toasted white bread, with a scoop or two of homemade mashed potatoes... and plenty of gravy. Typically a leftovers meal, I had a very specific craving for one, so I had to start from scratch and make a roast!

One of my favorite things to cook in a slow cooker are roasts, but I've really fallen in love with using my multi-cooker/pressure cooker for them. Instead of taking 3 hours on the stovetop, or even longer in a crockpot, you can have a fork tender chuck or rump roast on the table in about an hour.

If you set out to research it, over and over again, you will read that London Broil is not a cut of beef, but instead is a method of grilling and carving. Yet... like this chunk of meat I cooked here, there it sat in the meat case with a label calling it simply, "London Broil" and nothing else.

Most people are terrified of cooking a prime rib roast at home and for good reason. It is a very expensive cut of meat if you mess up!

I actually felt the same way for a very long time and I didn't try to cook one myself because I was so intimidated that I'd ruin it.

But, it's also a delicious cut of meat, so it's worth the effort, and, if you follow these four essential rules, you'll have a perfect, and impressive, holiday roast.

I've made this stew a few times over this fall and winter, but the process of measuring out, documenting and photographing a recipe, so that other folks can follow it too, can be a bit daunting at times, when all you really want to do is just sit down and eat!

There's a roast blazing across the interwebs and the world of Pinterest called "Mississippi Roast," and if you google it, you'll find it everywhere. It's the roast that broke the internet.

In the beginning of making this, like most others, I had no idea where the recipe began, or even how the recipe got the name Mississippi attached to it, because best I could figure, somebody who threw it together one day must have just happened to be from Mississippi.

Well, I'm here to set the record straight on that!

I know that meatloaf sometimes gets a bad rap, mostly I would venture a guess that it's usually based on past experiences with a dry, tasteless glob of meat. On the other hand, I actually enjoy a good meatloaf myself and so does The Cajun, and I've discovered that using the slow cooker is a great way to get it on the table, when you've got a busy day.

Seven Steak Gumbo

As far as I can discern, 7 steak gumbo had to have been born out of frugality.

Unlike its more pricey seafood cousin, it is a gumbo of beef and okra, but of a fairly inexpensive cut of beef, similar to round steak. Seven steak requires slow braising or stewing in order to bring out it's delicious, tender flavor, making it a suitable candidate for a gumbo.

It's called 7 steak because of the bone in it that is shaped like the number 7, when you can find it where the butcher hasn't removed it already, that is. I fix it most often as a Cajun smothered steak, but it can be used pretty much anywhere that you would use a braising steak.

Barbecue Round Steak

One of my favorite inexpensive cuts of beef has always been braising steaks, and of those I love cooking a good bottom round steak. It's a tough cut of meat, but give it a braise in some liquid, low and slow, and it transforms into a wonderfully tender piece of delicious beef.

Here I've slow braised it with onion, bell pepper and celery, and an easy homemade barbecue sauce - just another tasty way to prepare round steak and one that The Cajun loves.

This Barbecue Pork Brunswick Stew was one of the recipes I had in mind when I bought that 9-pound pork shoulder recently. I started with a wonderful Spicy BBQ Crockpot Pulled Pork, but already had a couple of planned leftovers meals in mind from that one meal, and this was one of them. 

Now... before I go any further, let me say this.  {Southern Style Hissy Fit warning...}

There will inevitably be someone who fusses at me about how I make this stew. I guarantee it will happen on social media, because... social media. Let me be clear to the naysayers.
