Chicken Tortilla Sandwiches (Mulitas)

Known as Mulitas in Mexican culture, highly seasoned chicken is sandwiched between homemade corn tortillas with shredded cheese and finished with guacamole or avocado, sour cream, pico de gallo or salsa, or whatever your favorite toppings are.

Chicken Tortilla Sandwiches (Mulitas)

I don't remember where I first heard about mulitas, and, in fact, when I first did, I mistakenly assumed it was just another name for a quesadilla!

The reason for that is that I usually make my quesadillas the same way as these mulitas.

Although both can have very similar fillings, some of the differences I've seen between quesadillas and mulitas include:

Fried Pasta

An easy, re-purposed pasta dish made from leftover pasta, pasta sauce, meats, like pepperoni, smoked sausage or other leftover meats and cheese. Fast and delicious!

Fried Pasta

While you can certainly make fried pasta intentionally using freshly boiled pasta, sauteed meats and jarred pasta sauce, it's really a dish born out of leftovers and wow is it a delicious repurpose!

Although, I've written it out here for you with measurements - which results in about 4 cups pasta, or what I say is two healthy adult sized portions - essentially there's no recipe. Just a good olive oil, butter, leftover pasta and leftover sauce is really all there is to it. Throw in some leftover cooked or smoked sausage, meatballs, pepperoni, shredded beef, whatever you've got.

Spanish Rice

With some variations in cooking method - stovetop, oven or a combination of both - and ingredients - tomatoes versus sauces, pastes or purees - that, which is defined as Spanish Rice across much of the country, is quite similar to Red Rice from the Lowcountry and the base of our beloved Creole Jambalaya of the Deep South.

Southern Chicken and Cornbread Dressing with Homemade Chicken Gravy

Southern Chicken and Cornbread Dressing

I have shared several dressing recipes along the way and I've even had my hissy fit rant about my feelings on the dressing vs. stuffing debate to which, I will reiterate, once again... whatever you grew up with, and what you do in your Southern kitchen, is right, bottom line. It's all good folks, so let's just eat, okay?

I know. I am such a rebel.

Spicy Cajun Sausage and Corn Soup

Spicy Cajun Sausage
and Corn Soup

Corn and tomatoes naturally pair together so well, and thanks to frozen and canned veggies, we have access to them to make a mighty fine soup in the colder weather months. The combination of corn and sausage with tomatoes is a very common soup in the Deep South, as always with the spin of the cook. I have a feeling it was probably made with the end of the summer crops, or birthed out of the need to use up other leftovers.

Southern Creamy Butter Beans (Large Lima Beans)

Creamy Butter Beans

Good old-fashioned, creamy butter beans, are a southern favorite for sure!

Not to be too confusing, Southerners refer to both large and small lima beans as butterbeans, although there is also butter peas to consider too, a smaller pea-shaped cousin, and a pea that is actually a bean and not a pea, akin to other Southern peas, such as lady cream and zipper, and that some Southerners also call butter beans ... but not to be confused with buttered peas which is a whole 'nother thing - just to confuse the rest of the world, as we Southerners love to do.

Whew! You just gotta love The South.

Southern Ham and Egg Salad

Southern Ham and Egg Salad

Here's another one of my favorite egg salad recipes, made with ham and a perfect sandwich filling to utilize leftover holiday ham.

Of course, if you don't have leftover ham or ham that you've previously frozen, just pick up a ham steak from the meat department or ask the deli to slice you a 1/4-to-1/2-inch slice of ham.

That's what I do!

Recipes for Holiday Leftovers

A collection of recipes from DeepSouthDish.com to repurpose those holiday leftovers into completely new meals!

Recipes for Holiday Leftovers

To me, there is nothing better than plain ole turkey sandwiches on white bread with mayo after the holidays, and I can eat them for days. But if you have hosted a big family gathering at your house, and didn't send everybody home with plates of leftovers, it's likely that you will end up with a whole lot of leftovers in your fridge. Here are a few ideas I've thrown together to give you some inspiration.

Cranberry Sauce - Besides spreading it on a turkey sandwich, use this as a condiment on waffles, pancakes, french toast, oatmeal or as a spread for rolls, croissants and biscuits. Spread cream cheese on a bagel and top it with cranberry sauce. Spoon it into yogurt and over frozen yogurt and ice cream or to top a piece of cheesecake. Swirl it into a cake mix, or make it into a glaze. Mix with a bit of apple cider or juice and make it into a sauce for pork chops or chicken. Mix it up with your usual olive oil vinaigrette recipe. Mix it with pepper jelly and pour over a block of cream cheese as a dip for crackers.

Stir Fried Cabbage Bowl

This stir fried cabbage recipe made with ground beef, and affectionately referred to as Crack Slaw by low carbers, was a favorite back when I was low carbing. Equally good with ground pork, turkey and even breakfast sausage, it's kind of like an inside out egg roll, without the high carb wrapper. Some folks refer to this dish as an egg roll stir fry or egg roll in a bowl.

Low carb. Yeah, in my dozens of diets over the years, I did it, the whole low carb thing, and frankly, it is a great way to lose weight pretty quick, say, for instance, to help shed those holidays pounds. Or for a special occasion coming up. For me, however, it was not good for the long term.

Tater Cakes! Mashed Potato Patties

Transform cold, leftover mashed potatoes into a whole new side with these delicious potato croquettes.
Transform cold, leftover mashed potatoes into a whole new side with these delicious potato croquettes.

Tater Cakes!- Mashed Potato Patties

Better known I guess as Mashed Potato Patties, but Tater Cakes sound so much more interesting, don't ya think?

The basic seasoning for my potato patties are always garlic powder, onion powder, and of course, a little Slap Ya Mama {affil link}, but honestly you can flavor these up just about anyway you like.

You can also use a variety of coatings in combination with the flour - bread crumbs are standard, panko bread crumbs are superb, but crushed potato chips or tortilla chips work well, especially the flavored and spicy kinds of chips, heck you can even use crushed plain corn flakes! Use your imagination.

Homemade Southern Red Beans and Rice

Monday. Wash Day. Red Beans and Rice day.

Back in the day at least, that was the way that it was, and the tradition of eating red beans & rice on Mondays, either for lunch or dinner, carries on down here in the south, even if nobody’s doin’ laundry.

Speedy Sausage and Hash Brown Breakfast Casserole

Speedy Sausage and Hash Brown Breakfast Casserole

I love breakfast casseroles but I hate having to think about building them the night before ... I never think about that the night before!! And besides that, I usually wake up deciding I want a breakfast casserole - I don't usually want it the night before!

While occasionally I will construct a night before dish, this breakfast recipe is my go-to for the most part. It's got everything a good breakfast casserole should have - potatoes, cheese, sausage, bacon and eggs. And you can make it right away!

Step by Step Pork and Egg Fried Rice

Turn that leftover pork roast and cooked rice into a quick and easy stir fry.

Step by Step Pork and Egg Fried Rice

Fried rice is perfect for using up leftovers - that leftover rice and that tail end bit of a leftover pork roast, though any leftover meat will do. Shredded beef roast, sliced steak, chopped chicken and even shrimp work well too, so be sure to save any leftover meat you have and stick it in the freezer to save for this dish.

Barbecue Sundae

It may seem strange, but this is a great way to use the leftovers from your cookout - a very clever and a great presentation and everybody loves this.

Chicken and Dumpling Casserole

One of the most popular recipes on the site, this no-stir chicken and dumpling casserole, made with self rising flour, cream soup, and chicken broth, is reminiscent of the flavor of the real deal, but in an easy casserole form.

Chicken and Dumpling Casserole

While the name may be the same, this version is of course, a casserole, and not technically exactly like good ole old fashioned chicken and dumplings. To me, however, it provides a consistency and flavor similar to the more labor-intensive homemade version, but in a super-easy form, especially if you are using leftover chicken or a rotisserie chicken from the grocery store.

If you are cooking fresh chicken, especially if you are using boneless, skinless chicken you want to just slightly under cook it when you poach it, since it will essentially continue cooking in the oven.

Deep Fried Grit Cakes

Remember those yummy garlic cheese grits we made last weekend? Well, we're about to turn these into some awesome grit cakes! Talk about good. Give 'em a try ... they are fantastic!

First preheat your deep fryer to 355 degrees, or heat oil in a large skillet. In a medium bowl, mix up some flour with salt, pepper and Cajun seasoning.

Mixed Bean Soup

A full flavored soup made with mixed beans, ham, the trinity and dried herbs.

Mixed Bean Soup

I had a couple of 1-pound packages of mixed bean soup mix in my pantry that I'd gotten from a food box, and to be honest, I had never been much fond of these mixes. Just too many different beans going on for me and I'm never quite sure what to do with them, or even how to season them.

Chicken & Spinach Cups

This is an adaptation of a recipe I pulled from a magazine a year ago. The ad was for Heinz Home Style jarred chicken gravy and Wyler's beef bouillon. Why the combination of beef bouillon with chicken gravy, I don't know but that's what it was.

Leftover Brisket Meat Sauce with Rigatoni

I made this dish using the last of the leftover oven-braised brisket that I made for New Years. I'm actually surprised there was any brisket at all leftover because while it was a huge brisket, it was a dish The Cajun totally loved and devoured, but I'm glad we did have some leftovers because this pasta dish was excellent!
