'Pain Perdu Lost Bread aka French Toast' is a great option for Christmas morning breakfast.

Thick slices of leftover bread, soaked in an egg, milk, sugar, salt and vanilla mixture and dusted with cinnamon sugar, pan fried for a crispy outer coating.


Great for Christmas morning! 'Hash Brown Quiche with Andouille Sausage'

Eggs, beaten with half and half and poured over sauteed andouille sausage, onion and sweet bell pepper, topped with Swiss cheese, and baked in a crust made from hash brown potatoes.

Roasted Corn Grits


As a side dish, these roasted corn grits rock!

I patterned them after the dish of the same name at Zea Rotisserie and Grill in Metairie, Louisiana after hearing somebody, somewhere along the way talking about them recently. Oh my goodness. I thought my garlic cheese grits were good, but these? Off. The. Chain.

The roasted corn adds such incredible flavor.

Ham, Egg and Cheese Breakfast Cups

 
 Ham, egg and cheese breakfast cups, are little mini omelets, baked in a Texas muffin pan and stuffed into a crispy ham cup. Shown here with mushrooms and spinach, but easily adaptable for your own favorite add-ins, these reheat and freeze beautifully, making them a perfect make-ahead breakfast.

I was flipping through my Woman's World magazine and was reminded about these little cups. I really enjoy that magazine! Have you ever read it?

I used to pick up a copy at the grocery store every now and again, so when I checked on a subscription, at first glance I had a little sticker shock! But after realizing it's actually a weekly subscription and not just monthly, I thought I would treat myself.

The magazine features things of interest to me as a woman - diet, fashion, gardening, health, crafting, spiritual inspiration, new cookbook features and, of course, recipes. This week's issue has the most adorable cupcakes and treats for Halloween so you might want to pick one up at the grocery store. One of the other recent issues featured egg cups similar to those I used to make often when I was working in the corporate world and had that long commute each way, every day.

Old Fashioned Seven Layer Salad

 
Classic 7 Layer Salad topped with a mayonnaise dressing is a common salad for barbecues and cookouts, parties, potlucks, church suppers and holidays, but why not make one just because?

7 Layer Salad


Seven Layer Salad is a good old-fashioned salad that has been around for years. It's perfect for cookouts, potlucks, church socials, reunions, funerals, and of course, the holidays!!

A salad made with 7 layers, typically with lettuce, sometimes tomatoes, chopped and sliced boiled eggs, peas, celery, bacon and cheese, or really whatever your favorite tossed salad ingredients are. Then the salad is topped off with a thick layer of a mayonnaise-based dressing, often Ranch dressing, and tossed just before serving.

Seven Layer Salad was a very popular salad back in the 70s and 80s, and though it kind of went the wayside for awhile, it seems to be making a resurgence. Since I am determined to bring back some of those old classics, I, for one, am thrilled.

I was in the mood for a quiche today and just so happened to have pouches of crab in the freezer. Nothing better than fresh lump crab for sure, and that's what I use the most, but I like cooking on the fly sometimes straight out of the pantry, so I always try to keep a couple of these pouches around.

They freeze well, are perfect for this very reason and they work much better than canned crab in many recipes, including this quiche, although if you can't find containers of crab in the fresh or frozen seafood section of your store, shelf stable canned is fine to use too - just drain it well.

Homemade Buttermilk Pancakes


Besides tweaking the baking powder and baking soda, I've been making my homemade pancakes this way for more than 30 years, and I think they've stood the test of time.

Don't get me wrong - I do realize that just adding water to a pre-packaged mix sure makes things a bit easier in this hurry-up world we live in, but honestly it doesn't take any time to mix up a fresh batch of pancake batter and no worries over weird ingredients or preservatives lurking in there either because you know what went in it.

I so love breakfast foods. I love food and eating, but I really enjoy a good breakfast.

But seriously, since I have the time in the mornings I love making a hearty breakfast occasionally - especially oatmeal when the weather is cool - but eggs of any kind, any time. Okay. Sometimes muffins or some kind of sweet bread. But most often, eggs. They are a super food for sure, loaded with nutrition.

I really enjoy this hash because it's very satisfying and filling and super delicious and I almost always have all the ingredients on hand. I really love the spice of the Cajun fried turkey, but I've used regular deli turkey, and ham also works really well here. You can also switch up the cheese to your favorite of course.

Eggs are dropped into a bed of fiery tomato sauce, made from fresh tomatoes paired with chunky Rotel and enhanced with bacon, onion and sweet bell peppers, and then passed in the oven to set, topped with cheese and served over cheese grits.
