I was already nearly done with stacking groceries on the belt at the grocery store, when I remembered that a couple of recipes that I wanted to make use bottled chili sauce. Doesn't that always happen?

A quick glance near the checkout told me it wasn't gonna be close enough at hand to just do a run and grab, so rather than having to get back in a line for a couple of items (and probably finding another handful of things I really didn't need along the way), I decided I'd just go home and try to make up my own homemade version.

You don't have to be from Kentucky to love the Derby. We watch all of the build up to the fastest and most exciting two minutes in sports at my house every year, and even though we're from Mississippi, we still sing along with "My Old Kentucky Home," a tradition that actually started in 1924. Us Southerners tend to connect commonly to things like that.

This recipe is a real throwback to way back that some of you might remember. Grab an old church, community or junior league cookbook, and it's bound to be in there somewhere, though often called by other names and sometimes simply called Apricot Chicken, though it's always been more widely known as Russian chicken.

The name of the dish has nothing to do with the country or people of Russia and comes from the use of Russian dressing, originally a spicy mayonnaise and ketchup condiment, somewhat similar to Thousand Island dressing, and one that dates back to the early 1900s, said to have been invented by James E. Colburn, a resident of New Hampshire USA.
