Not long ago, my sister in law told The Cajun she was getting rid of some old cookbooks and asked him if I might like them.

Since physical libraries don't hold onto cookbooks for very long these days and the older cookbooks are extremely useful tools for recipe research, I'm never one to turn down cookbooks, so I said of course! 

Most of them were older Southern Living annuals and back then, not only were they summaries of the year's recipes shared from the magazine, a lot of folks don't realize that many Southern Living recipes started much like you see with Taste of Home - they were recipes submitted by readers!

Apparently Crazy Crust Apple Pie originated with the Pillsbury company, likely sometime back around the late 60s to early 70s - yes y'all. That was more than 50 years ago.

I believe that qualifies this as a vintage recipe!

Folks tend to associate "vintage" recipes to those from the 50s and earlier and forget how long ago those 60s are now. Trust me I get it. It seems like it was yesterday, but nope. It's been a pretty long time now!

I have seen a variation of these apple pie skillet biscuits across social media for so long, that you know I had to eventually try them too, right?!

Made with biscuits and pie filling, they are a sweet treat that's easy to throw together on those cold nights when you want a little something for that sweet tooth.

I can't recall where I first saw this idea to combine pork chops and apple pie filling, but I thought it sounded great and turns out I had a can of apple pie filling in the pantry I needed to use up!

I'm sure that I bought it for a very specific reason, now long forgotten. I'm terrible about that, to the point that now, when I buy supplies for the pantry to use for a specific purpose later, I tape a sticky note to it! Now I have notes all over the outside of my deep freeze and a bunch of them stuck on top of canned goods in my pantry. Hilarious, I know, but hey... I ain't gettin' any younger y'all!

Anyway, I was right. Apple Pie Pork Chops are pretty yummy!

Don't worry... that "cleaner eating" thing doesn't mean we're changing our website and recipes, and I'll explain on down the post, but I do want to first say Happy New Year y'all!

I hope you got in your traditional Southern New Year foods by now - or whatever is customary where you live - and I truly wish you much health, wealth and happiness in 2016. Yes, this is my first post of the new year - mostly because, well... I've been spending time with my family, my grandkids, the animal kingdom, and my favorite 3-Rs... relaxing, resting and reading.

Fruit salads are popular for holiday meals and there must be thousands of variations, from congealed, to mixed fruit, to frozen. This classic version made from an assortment of fresh and canned fruits and dressed with an egg custard that substitutes juices for the traditional cream sauce, dates back many years and has been a holiday favorite in my family for years.

Maple Glazed Drop Apple Fritters


Apple fritters are delicious little bites of puffy fried, brown sugar and cinnamon dough, filled with chunks of apple. What could possibly be wrong with that?

I like to finish them with a powdered sugar glaze infused with just a touch of maple extract just because I do love how it tastes with apple. That's, of course, completely optional, as they are plenty good with a basic glaze or even just a simple dusting of plain powdered sugar, if you prefer.

I first made this dressing last Christmas, then again this Thanksgiving and I may even make it again this Christmas, though I'm actually still trying to settle between having a bread or rice dressing, since I'm going with a prime rib roast this year.

Yes, I'm moving away from the traditional turkey and dressing dinner for Christmas this year and going the route of a very expensive hunk of prime rib roast beef with au jus, that I have already warned The Cajun will not be cooked "well done."

When I was growing up, there was one cranberry sauce at our house over the holidays. The familiar, cylinder-shaped, super sweet, jellied cranberry sauce, decorated with ridges molded right from the can it slurped out of.

It's one thing in common from our holiday tables past, that so many of us Southerners still connect to nostalgically, no matter where we grew up.

For those who were asking, this is the coleslaw that was pictured with the most recent pulled pork recipe I posted.

There are essentially two basic schools of taste on coleslaw - one creamy and usually mayonnaise based, and others, like this, more heavily vinegar based. Considering that it's apple season and apples are plentiful right now, I decided to add in some grated apple to make it a little more seasonal.

Okay, okay.... even though the weather down here isn't completely cooperating with the Fall season, I broke down and did something sweet with apples finally - well, besides just slicing and eating them, that is. Apples are one of my favorite snacking fruits, so I've certainly been doing my share of that!

Sure wish the prices would come down some more, but that might be wishful thinking in this economy, I guess.

Hey y'all... it's been awhile! Did ya miss me?? Well, in case you were wondering... you see, as I write this, there was this pesky little hurricane named Isaac that interrupted our lives all of last week. After he barely by-passed the west coast of Florida, he was headed right to the Mississippi Gulf Coast - my backyard!

There were days of prep, checking supplies, filling gas cans for the generator that would keep our freezer and fridge going, bolting down the hurricane shutters, stuffing the garage and storage sheds with all those nice things like chairs, tables and grills that you want to make sure are still around afterward, and all the fun stuff that goes with preparing for a hurricane.

Waldorf salad is a fruit salad of apples, grapes or raisins, and nuts, tossed with a mayonnaise dressing. Served alone as is, or over a bed of shredded or whole leaves of lettuce, it's a holiday favorite. Add chopped, cooked chicken for a great main dish salad anytime of the year!

Like the Hot Brown, Waldorf Salad comes to us from the kitchen of a hotel, this one the Waldorf in New York City. It is said to have been created oddly enough, not by the chef, but by the maitre d'hotel, or kitchen manager, Oscar Tschirky for a 1893 society party. I actually have made two different varieties of this salad, trying to get one that looked good in a photograph. Just ain't happening y'all, though I tried! Some foods just refuse to be photogenic.

This is such a tasty and moist apple cake, and you can make it a day ahead, because it gets even better, making it a perfect addition to the holiday table. I first met this cake 30 years ago, though frankly I'm sure it's been around even longer than that, meaning you can count on it being well-tested and reliable too.

Yay, it's apple season! Well, it's at least the beginning of apple season and you'd know it too if you follow any food blogs because apple recipes have been in abundance around the net. I love apples in cake, cobbler, in pie, baked, even simply sliced up and dipped in peanut butter - a treat I can certainly get easily carried away with.

Fritters are a fun way to enjoy apples for a change too, and while there are a couple of ways to make them, I especially love them fried in rings like this. I also love them in a drop style, deep fried fritter, similar to my corn fritters - those I'll do next.

Skillet fried apples aren't deep fried y'all! As I've mentioned before, in the South we refer to frying things a lot, even though it often has nothing to do with submerging a food item in deep boiling oil.

So many folks outside of the South associate our recipes titled fried cabbage and fried corn the same as they do our fried chicken, which of course, we love, but the truth is, very often, the term "fried" simply refers to the cooking of something in what we call a frying pan aka skillet. Yep. Simple as that!

I call these 7-Up Apple Dumplings, but of course they can be made with any lemon-lime soda, like 7-Up, Sprite or Mountain Dew. Mountain Dew is a very popular choice, but not a beverage I ever acquired a taste for personally.

The soda forms a syrup, generally found with using sugar in regular apple dumplings, though I have been told by readers that you can also use diet sodas for these apple dumplings. I've never done that so I'm not 100% sure if the result is the same without the sugar.

This recipe is for a very basic, old fashioned apple pie, using 3 pounds of mixed apples for a nice depth of flavor, and the addition of a bit of jam or jelly as a nice little extra flavor burst. A brush of the bowl juices across the top and we've got another great recipe for the apple recipe collection!

Thankfully, apples are available year-round these days, but as I write this, it's fall, and that mean apples are both plentiful and cheap right now and even though Mother Nature cannot seem to decide whether we are in full blown summer or fall down south, I thought that an apple cobbler sounded so good.

I've mentioned before that I'm not really much on "seasonal" cooking anyway because I like to cook what I have a taste for, when I have a taste for it, and my taste buds don't seem to have a calendar. This apple cobbler is a great base for many other seasonal fruits also!
