Stovetop Rice Pudding

A creamy rice pudding made right on the stovetop!
A quick, small batch, stovetop version of creamy rice pudding with raisins, made using leftover cooked rice.

We eat a lot of rice here in the Deep South, more so than potatoes I'd say, although we do eat our fair share of those too. Since rice is grown all over the south though, including Arkansas, here in the Delta regions of Mississippi and over in Louisiana, chances are there is always some leftover rice around.

Storing rice can be a challenge because even rice that is tightly sealed tends to harden in the refrigerator. This is off-putting to some folks so they don't even save leftover rice. They pitch it. Don't do that!

We are still in the process of moving out of our old home, while the new house is looking more and more like we have lived here for 20 years! And the garage, oh you don't even want to know what that looks like, but as I have the energy, I bring in a box and go through it.

We are moving all of the Christmas stuff, the china from the china cabinet and have a freezer and a few pieces of furniture to go and we'll be finished... finally. The Cajun and I were so tired and hungry yesterday afternoon that we stopped by Hartz's Fried Chicken and treated ourselves to their buffet for an early supper.

Old Fashioned Bread Pudding


Ah, old fashioned bread pudding. A dessert born out of economics and the need to use up stale bread, turned into a delectable, delicious plate of total comfort. You cannot consume a slice of this and help but feel like you just got a big ole hug. And I just so happened to have a half a loaf of French bread leftover from this weekend! Lucky me.

Oh. My. Goodness. Y'all. This is soooooo good.

In December, I purchased a Holiday Mixed Fruit gift box special that had 44 pieces of beautiful, juicy and delicious fruit - anjou pears, ruby red grapefruit, juice & navel oranges, tangerines & tangelos, and 16 apples, 4 different varieties.

I thought that it was an amazing value!

I am an oatmeal lover. Always have been. When there's a chill in the air, and on the rare occasion here, that freezing morning that you have to head out the door, there's nothing that can warm you up like a steaming bowl of oatmeal for breakfast and my oatmeal of choice has always been Quaker. I play around with it sometimes, adding things, but for the most part my favorite is just a basic bowl with a little sugar, butter and cream. Maybe a little Cinnamon Sugar.
