You can't beat a classic bean dip and there's a reason it's stood the test of time!

Everybody seems to like them, whether it's baked, or served cold like this one, though this one may certainly be warmed up to serve as well. Personally, I enjoy them equally, but when I'm in the mood for a quick bean dip, this is the one that I lean to.

Slow Cooker Pinto Beans (Frijoles De La Olla)

Pinto beans prepped with a preboil and then slow cooked with onion, bacon and simple seasonings. Serve topped with onions, tomato relish, or pico de gallo with cilantro, if desired, and cornbread or warmed tortillas on the side. A perfect fit for refried beans too!

Of course, beans have always been popular in the South and three beans reign supreme in the Deep South - red kidney beans used for our Monday red beans and rice, white beans generally prepared Cajun style with andouille sausage and more widely across the South in general, pinto beans, prepared Southern-Style.

In the Deep South we make our red beans and rice with red kidney beans, not the smaller more oval shaped red beans that are more popular in Texas, and yes, there is a difference!

For red beans, though I do love them long stewed and cooked on the stovetop the best, I have taken to using the Instant Pot the past few years, just because I'm such a poor advance "planner." For pintos, I have tended to always do those stovetop.

Today, I'm trying pintos in the slow cooker, but with some stovetop adjustments. I know, I know... yeah, you can dump everything in the slow cooker all at once and call it a day, literally, because it is probably going to take all day doing that.

Chili Beans with Rice


Any kind of a beans and rice dish is a winner for me.
  • It's hearty and filling.
  • It's high in protein and fiber.
  • It's inexpensive.
  • If you use a brown rice and a turkey smoked sausage, it's pretty good nutrition.
  • And, the most important thing. Done well, with a great blend of herbs, spices and seasonings, they are delicious!

I love nachos pretty much any way you can fix them. I mean who doesn't like piles of tortilla chips, topped with loads of cheese and all kinds of goodness? It's a great game day or movie night snack too and pretty darn easy to throw together.

This one uses some leftover beef roast that you've reserved from that Sunday dinner, along with some seasoned pinto beans, and then finished with some Pico de Gallo or all those delicious individual garnishes we all love - chopped fresh tomatoes, chopped purple onion, sliced green onion, chopped cilantro, sliced or chopped pickled jalapeno, sour cream, guacamole or chopped avocado.

We've had so many days of rain now that I've literally lost count, and according to our weatherman, there's more to come this week. Generally speaking, I don't mind the rain at all, well, so long as I don't have to drive anywhere in it at least. It's relaxing and cleansing, sort of washing away the world's residue and making everything fresh once it moves along.

Boy don't we need that in this world today!

Beef and Bean Burrito Skillet Dinner

I love Beef and Bean Burritos and this recipe transfers that flavor into the ease of a skillet meal. Made from scratch, it's fresh and just delicious.

If you are in a rush, you can speed stove to table time by substituting a package of taco seasoning (eliminating all items beginning with salt through to, and including, the oregano) and a can of black beans or seasoned, refried beans for the pintos and Sazon.

Should I top my beef and bean burrito skillet dinner?

Absolutely, yes! I suggest topping your own individual serving with your favorite burrito garnishes:

Ranch Style Cowboy Beans

Ranch beans have been around a very long time, in fact, I'm pretty sure that some form of them probably date all the way back to pioneer days and wagon trains, and in this version they are very often referred to as Chuck Wagon or Cowboy Beans.

When I think of these beans I can't help but to think about that scene around the campfire in the movie Blazing Saddles! You know the one.

When you mention pinto beans in the South, most folks think of a more classic version, often referred to in some parts of the country as soup beans. I didn't grow up with pinto beans but here in this part of The Deep South, we are all about red beans and rice for sure.

I decided to make a version of pintos much like my own homemade red beans and rice, but with the addition of a little Tex-Mex flair by using jalapenos in place of the usual sweet green bell pepper and a few other flavor boosters.
