I have already been eating cucumbers, cantaloupe, strawberries, watermelon and tomatoes, like I'm never gonna see them again, and summer only just arrived.

Far as I'm concerned they need to move the official beginning of summer up, and just cut spring short, because in the Deep South spring is, oh, I don't know... about two weeks at most I'm guessing. Summer heat and humidity run right on in like it's been waiting. Much of the rest of the country has been pretty hot too from what I'm seeing, so clearly it's not just the south. At least some of y'all do get a reprieve once in awhile. We don't, at least not until it's pretty much winter. Apparently my body just needs hydration or something, because those cooling foods absolutely have been a regular part of my diet here lately.

Cherry Limeade

After that nice little cool spell we had, it sure has warmed up here in a hurry on the Coast. And with all that rain, it's left behind a lot of humidity. Already. Perfect weather for one or three of these. The homemade sno-cone syrup I shared recently is what I use to make these, and while I am not even going to try and say that this is a copycat of the beloved Sonic cherry limeade, personally, I like mine better. You can, of course, use any commercial syrup and I've left a few suggestions in the recipe.

Crushed ice is the key!

Coconut Key Lime Pie with Minty Whipped Cream

I love lime. I absolutely love it. Pair that up with some sweetened condensed milk and I am in heaven.

Traditionally Key lime pie contains egg yolks and is unbaked, though that is rarely done these days, since most fillings with egg are now baked.

Some say that baking the pie completely changes its flavor and texture though and use pasteurized egg yolks to squelch the fears of using raw eggs in an unbaked filling. Key lime pie also sometimes has an egg white meringue on top, though I prefer mine plain with only a dab of whipped cream.

Lime Icebox Pie with Pretzel Crust

A super tangy icebox pie made with lime juice, lime zest and a packet of lime Kool-Aid. This one is made in a pretzel crust, but a homemade or commercial graham cracker crust works great too! Substitute lemon for lemon icebox.

This recipe is based on a pie from the Kraft Food & Family magazine a few years back. If you like tangy, you are gonna love this!!

And, hopefully this will invoke thoughts of summertime and the hot summer sun, swimming pools and beaches {and maybe even cabana boys} and little fruity umbrella drinks for those of you suffering the odd temperament of Mother Nature.
