Cheesy Loaded Twice-Baked Potato Casserole

A cheesy potato casserole, made with potatoes that are baked twice, and including all my favorite loaded baked potato ingredients - bacon, butter, sour cream, cheddar cheese and green onion - all in a simple casserole form.

Y'all pretty much know by now how I feel about potatoes. Being married to a meat and potatoes man, they are certainly a pantry staple in this house, making a regular appearance on the supper plate in some form. Truth is, being a lover of carbs, I love them too, and pretty much any way you can make them - including casseroles like this, that center around potatoes.

Recipes very similar to this casserole can be found everywhere, but mostly they come in a mashed potato form. When I set out to make my version though, I had some specifics in mind that I wanted it to have.

Ya know, seriously... I am of the opinion that it'd be kinda hard to mess up a dish of potatoes au gratin no matter what you do to them - I mean c'mon now. Potatoes. Cheese. Butter. Cream. Hello. If you're making this for the holidays, you'll probably want to double the ingredients and do extra layers.

Well, I personally love Julia's way with this classic potato dish, however I decided to play with it a bit. You know. For the holidays.

Scalloped Potato Casserole

I grew up with two basic potato casseroles. One that was made with a buttery milk sauce that my Mama called scalloped potatoes; the other made similar but adding in cheese, that we called potatoes au gratin. I used to love it when Mama made them. Both are just simply heartwarming and delicious and a perfect potato side dish for cooler weather.

Made with heavy cream, milk, butter, sour cream, cream cheese, cheddar cheese, Ranch dressing mix, garlic and onion powder, Cajun seasoning, paprika and French fried onion bits.

Hot dang it is muggy uggy down here along the Gulf Coast as I write this. Geez... you'd think it was July already for pete's sake. I was tryin' to get some pics of a few flowers earlier and had to keep wiping the lens and viewfinder between every shot because it kept foggin' up! All I can say is thank the Lord for central air conditioning.

Every southerner likely has this one in their recipe box, at least in some variation.

Often called a Cracker Barrel Hash Brown Casserole copycat, but honestly, I don't eat at Cracker Barrel enough - not that I don't love it, I do, very much - but I can't recall if I've ever had hash brown casserole there, so I'm not qualified to attest to whether this qualifies as a copycat.
